Apple Pie Baked Oats

Apple pie baked oats have the flavors of apples and cinnamon in a nutritious breakfast option.  It is easy to make and the leftovers are great too!

This apple pie baked oatmeal recipe is a perfect fall breakfast.  It is cozy, delicious and loaded with apple goodness.

The best part is you can make a batch on the weekend and reheat slices for breakfast throughout the week. (Ps. It is extra amazing with a dollop of vanilla yogurt on top!)

I originally made this recipe in the fall of 2015.  I was just dipping my toes into what was going to grow into a baked oatmeal obsession.

Little did I know I would spend the next few years developing all kinds of healthier dessert inspired recipes. I haven’t heard any complaints around here yet!

MiMi especially likes the baked oatmeal inspiration.  She was here when I made the first batch and she has been making it ever since.

The pictures from way back when were less that appealing.  I certainly still have a long way to go, but I figured I would use getting new pictures as an excuse to bake up another batch.

Beside I had just loaded up on apples and want to make the best of them while they are in season. I just love apple season!

Why We Love These Cinnamon Apple Baked Oats

There is just something about some warm oatmeal on a cold fall or winter day. They are a perfect way to eat something healthy in the morning and feel full until lunch.

This recipe not only features fresh apples and oatmeal, but maple syrup and plenty of cinnamon. They are baked until the texture is just perfect.

So folks who are opposed to a bowl of mushy oatmeal will love these oats. People who already love oatmeal will too.

It is a great way to start your day off with fiber and flavor. Not to mention how good it smells while it bakes.

We like to make a batch on Sunday morning and warm up the leftover throughout the week. It is such an easy way to meal prep for breakfast.

Easy Adaptations and Toppings

If you want some extra crunch and healthy fats, stir some chopped pecans or walnuts into the oatmeal mixture. Either would be delicious adaptations.

If you don’t have maple syrup on hand, use honey instead.

Feel free to add a little bit of ginger or nutmeg if you like more spice in your apple recipes. It is easy to turn it up or down depending on your taste preferences.

These baked oats are fabulous on their own, but we really like to add a little something extra to the top. A drizzle of maple syrup or a dollop of additional yogurt is a fun way to go.

A sprinkle of candied pecans or honeyed pecans is good as well. You could even use some spiced walnuts if you wanted to.

Adding a splash of milk to the bowl when you reheat it keeps the oatmeal soft and moist. You can use regular milk or your favorite milk alternative.

Apple Pie Baked Oatmeal

Ingredients 

Apple Mixture

  • 2 apples chopped
  • 1 Tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves

Oatmeal Mixture

  • 2 large eggs
  • ¾ cup maple syrup
  • 1 Tablespoon vanilla extract
  • 2 cups old fashioned oats
  • ¾ cup yogurt plain or vanilla, either works
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon

Instructions 

  • Preheat oven to 375° F
  • Stir together apples, lemon juice, cinnamon and cloves. Spread on the bottom of a greased pie plate.
    2 apples, 1 Tablespoon lemon juice, ½ teaspoon ground cinnamon, ¼ teaspoon ground cloves
  • In a mixing bowl, stir together eggs, syrup, yogurt and vanilla until well combined.
    2 large eggs, ¾ cup maple syrup, 1 Tablespoon vanilla extract, ¾ cup yogurt
  • Add oatmeal, salt, baking powder and cinnamon and stir until completely incorporated.
    2 cups old fashioned oats, ½ teaspoon salt, ½ teaspoon baking powder, ½ teaspoon ground cinnamon
  • Spread over apple mixture in the pie plate.
  • Bake for 40-45 minutes or until set.

Notes

You can use quick oats if that is what you have on hand. Either work well in this recipe.
Feel free to add some chopped pecans to the oatmeal mixture if you want a little crunch.
