Apple pie baked oatmeal is a perfect fall breakfast. It is cozy, delicious and loaded with apple goodness. The best part is you can make a batch on the weekend and reheat slices for breakfast throughout the week. (Ps. It is extra amazing with a dollop of vanilla yogurt on top!)
Stir together 2 apples, 1 Tablespoon lemon juice, ½ teaspoon ground cinnamon and ¼ teaspoon ground cloves. Spread on the bottom of a greased pie plate.
In a mixing bowl, stir together 2 large eggs, ¾ cup maple syrup, ¾ cup yogurt and 1 Tablespoon vanilla extract until well combined.
Add 2 cups old fashioned oats, ½ teaspoon salt, ½ teaspoon baking powder and ½ teaspoon ground cinnamon and stir until completely incorporated.
Spread over apple mixture in the pie plate.
Bake for 40-45 minutes or until set.
Notes
You can use quick oats if that is what you have on hand. Either work well in this recipe.
Feel free to add some chopped pecans to the oatmeal mixture if you want a little crunch.
