Crockpot Kielbasa and Cheesy Potatoes

If you are looking for an easy and cozy meal, this crockpot kielbasa and cheesy potatoes recipe is for you. It is creamy, cheesy, and super simple to make.

Getting dinner on the table doesn’t get much easier than this. Just dump a few simple ingredients in a crockpot and let it do its thing while you do yours.

You end up with tender potatoes bathed in cheese with bits of smoked sausage throughout. The only prep work is measuring the sour cream and cutting the kielbasa into chunks.

It really is that quick! Just make a quick veggie to serve on the side, and dinner is ready to go!

I think it is important to sit down to a meal as a family. It is one of my favorite parts of the day.

That is where we get to catch up on what has happened and discuss what is coming up. Making that meal ourselves is more economical.

I get it though, we are all busy. It can be hard to work all day, do the activities and still cook dinner.

So I would like to formally give you permission to take shortcuts where you can. While it can be satisfying to make something completely from scratch, it isn’t practical every day.

If using a bag of frozen hash browns means you can make dinner happen, use the frozen hash browns. Your family will not care that you didn’t dice the potatoes.

Though if you want to, be my guest. You can still make this recipe, it might just take a little bit longer for the potatoes to get tender.

Using kielbasa is another great shortcut, that is why we have so many kielbasa recipes. The smoked sausage adds a lot of big flavor with no extra effort.

The smokiness is so delicious with the cheese sauce. Ours looks a bit different because it is homemade, but you can use your favorite sausage from the grocery store for fabulous results.

Crockpot Kielbasa and Cheesy Potatoes

If you are looking for an easy and cozy meal, this crockpot kielbasa and cheesy potatoes recipe is for you. It is creamy, cheesy, and super simple to make.

Total: 4 hours 10 minutes

Ingredients 

  • 28 ounces frozen potatoes O'Brien
  • 1 pound kielbasa
  • 10.5 ounces cream of chicken soup
  • ½ cup sour cream
  • cups shredded cheddar cheese

Instructions 

  • Spray the crockpot insert with cooking spray.
  • Place all ingredients in your slow cooker, reserving a little bit of cheese to sprinkle on top.
  • Give the mixture a stir until everything is evenly coated. Sprinkle the top with the reserved cheese.
  • Place the lid on the crockpot and cook on low for 6 hours or high for 4 hours, or until the potatoes are tender.
  • Give the mixture a stir before serving. The cheese sauce will thicken a bit as it sits.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.

Notes

If your family doesn’t like the peppers and onions in the potatoes O’Brien, use plain hashbrowns.

  3. Question…can I substitute cream cheese for the sour cream? Would it need a bit of milk?

    1. I actually think cream cheese would work really well. I doubt you would need milk, everything releases some moisture as it cooks.
