Delicious filling dinners don’t have to be hard to make. As with most crockpot recipes, this recipe allows you to cook a great meal with very little effort.
Pork loin is such a great cut of meat for a slow cooker meal. It is super versatile and can take a lot of different kinds of flavor combinations.
It cooks up tender and juicy when cooked low and slow, especially when it is cooked in sauce. We frequently make pork loin in a creamy gravy, but this honey mustard version is a fun change of pace that feels a little lighter and brighter.


You can cook it to a point that it is easy to slice like I did here. With a bit more cooking it can be shredded a bit as well.
Both presentations work well for this meal. It looks nice sliced and served with a bit of the gravy. It also tastes amazing if it is presented in a more homestyle way as hunks of meat that are served in the gravy.
Either way, make sure to have some mashed potatoes, rice, or noodles to serve it with. You are going to want to have something to soak up that tasty gravy.

Carlee’s Tips and Tricks
Whole muscle cuts of pork such as pork loin are considered to be cooked to a safe temperature when they reach 145℉. It will still have a blush of pink in the center at that temperature but is perfectly safe to eat. (You can learn more about safe cooking temperatures for different cuts at pork.org).
If you intend to slice it, pull it out of the slow cooker in that temperature range and allow it to rest for 10-15 minutes before cutting it. Failing to let the meat rest will increase your chances of dry meat.
Plus, this will give you time to thicken your gravy a bit. So, you might as well let that meat rest like you should.


Because the pork loin is cooking in a moist slow cooker environment, it would be hard to dry it out. So, don’t worry if you accidentally let it go a bit over. It will still taste delicious!
Luckily pork loin is a very economical way to feed your family because they are going to be asking for this one over and over again!


Crockpot Honey Mustard Pork Loin
Equipment
Ingredients
- 4 pounds pork loin
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon garlic powder
- ½ cup Dijon mustard
- ¼ cup honey
- 1 large onion diced
- 1 cup chicken broth
- 2 Tablespoons cornstarch
- 2 Tablespoons water
Instructions
- Put 4 pounds pork loin in the crock of your slow cooker. (A little more or less is fine, just try to keep in in the general range of 4 pounds.)
- In a small bowl, stir together the 1 teaspoon salt, 1 teaspoon pepper, ½ teaspoon garlic powder, ½ cup Dijon mustard, and ¼ cup honey. Spread the sauce over the pork loin.

- Add the diced 1 large onion to the crock and pour the 1 cup chicken broth around the edges of the pork roast. (Try to leave as much honey mustard sauce on the pork as you can.)

- Place the lid on the crockpot and cook on low for 5-6 hours for a sliceable roast or 6-7 hours to shred it.
- Once the pork is cooked through, remove it from the crockpot and allow to rest for at least 10 minutes before slicing. Tent with foil to keep it warm.
- Meanwhile, make a slurry out of 2 Tablespoons cornstarch and 2 Tablespoons water. Stir it to the sauce in the slow cooker. Cook on high while the meat rests and you slice it. It will thicken the sauce into a gravy as it starts to get bubbly.
- Serve the sliced pork and gravy with your favorite sides.
