Creamed Eggs on Toast

If you have extra hard boiled eggs after Easter, adding them to a simple milk gravy and serving them over toast is a great way to use them up. This is one of those old fashioned recipes that has stuck around for good reason.

MiMi was the one that suggested we make this one. She has quite the flock of chickens. So, we always have a nice supply of good farm fresh eggs.

If you have never had creamed eggs before, it is kind of what it sounds like. You start with a quick roux and make a bechamel sauce, or milk gravy.

Then you stir in some chopped hard boiled eggs and serve it over toast. I think it would also be great over some buttery biscuits.

It is a bit like SOS or biscuits and gravy, but with eggs instead of beef or sausage. If you have ever had either of those things, you know this will be comforting and delicious too.

However, you could jazz it up a bit if you want by stirring in some herbs. Or try adding a tiny bit of Dijon mustard to the bechamel. It has a way to really livening up the eggs.

If you happen to have some leftover ham, chop it up and throw it in with the eggs. The combination is perfect.

You could also try sprinkling a little bit of cheese on top or stirring some cheese into the gravy if you want. Or try some sauteed veggies or whatever sounds good to you!

Creamed Eggs on Toast

Turn hard boiled eggs and milk gravy into a comforting meal with this yummy creamed eggs on toast recipe. It is simple to make and tastes delicious.

Ingredients 

  • 6 hard boiled eggs
  • 2 Tablespoons butter
  • 2 Tablespoons all-purpose flour
  • 2 cups whole milk
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 pieces toast

Instructions 

  • Peel 6 hard boiled eggs and give them a rough chop.
  • Melt 2 Tablespoons butter in a medium saucepan or skillet over medium heat.
  • Stir in 2 Tablespoons all-purpose flour and cook for 1-2 more minutes, stirring occasionally.
  • Gradually mix in 2 cups whole milk so that no lumps form and stir constantly until mixture starts to bubble and thicken.
  • Season with ¼ teaspoon salt and ¼ teaspoon ground black pepper. Stir in the chopped eggs.
  • Remove from the heat and give the gravy a taste. Add more seasoning if necessary.
  • Serve hot over toast. Garnish with more freshly ground black pepper if desired.

    So glad you made it. I was very curious. Is I was reading your recipe I was thinking 2 things and you answered both. Sounds very much like SOS and I bet this would be soooo good on biscuits Yes and yes!
