If you love the idea of coming home to a bowl of hot soup after a long cold day, this is the recipe for you. The soup is hearty enough to fill you up and is loaded with veggies and lots of flavor.

By now, you know that I have been on a bit of a roll sharing crockpot soup recipes. I just love how easy they are.

Besides, you guys are always asking for more crockpot recipes. So it is the perfect way to give you what you want and celebrate soup season all at once.

This soup is perfect for a weeknight. There are no steps that happen at the end, so you can eat whenever you are ready.

It is also a great meal for the weekend. We love making venison chili on Sundays and have a bowl whenever we feel like it while watching football.

This soup would be perfect for that as well. It is a nice change from chili while still hitting some of those same vibes.

In fact, you could use ground venison in place of the ground beef if you want to. It would be great that way too!

Actually, this is one of those recipes that is super easy to switch up. You toss in whatever you have, kind of like a brunswick stew.

There are no wrong answers. You can easily stretch it with more cans of veggies or beans.

You could also toss in some leftover BBQ chicken or smoked meat. It would be great with pulled pork or chunks of brisket.

You could also use a can of Rotel in place of the diced tomatoes if you want a little bit more spice. Add two if you really want a little zip.

I think that is the best part about soups. Recipes are great guides to help you build the flavor, but you can take them wherever you want.

As long as there is room in the pot, you can keep adding whatever feels good. I may or may not be guilty of going until it is full a time or two. 😉

Crockpot Cowboy Soup

This crockpot cowboy soup recipe has BBQ vibes in a simple but delicious soup. It is a perfect filling meal for when it is chilly outside. Make some to see for yourself.

Ingredients 

  • 1 Pound lean ground beef browned and drained
  • 2 cups beef broth
  • 1 large yellow onion diced
  • 1 green bell pepper diced
  • 15.25 oz can kidney beans drained
  • 15 oz can black beans drained
  • 15.5 oz can sweet corn drained
  • 14.5 oz can diced tomatoes
  • 1 cup BBQ sauce
  • 1 Tablespoon chili powder
  • 1 teaspoon minced garlic
  • ½ teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions 

  • Combine all ingredients in a crockpot and stir.
  • Cover and cook for about 4 hours on high or 6 hours on low.
  • Stir and taste. Adjust the seasonings to your liking. Serve as is or add your favorite toppings. We like some shredded cheese. It is also great with oyster crackers or corn chips.

    1. Sure! Just follow the instructions but simmer it for a bit rather than slow cooking it.

    This soup is delicious. Made the recipe as written with one addition. Added 2 more cups of beef broth. I think my crockpot cooks hotter and evaporates too much. Used frozen corn and Rotel. Will definitely be made often.

    Yum, it’s like a Texas version of Brunswick stew. The picture has corn but there’s no corn in the recipe. Corn would be a great addition! Thanks for this recipe!
