I am just loving the recipes in a jar series. It is fun to come up with different giftable recipes.

They are perfect for teacher gifts, hostess gifts, neighbor gifts and more. They can be give on their own or as part of a themed gift basket.

After making the cinnamon pancake mix, it seemed like some muffins were in order. These chocolate muffins are decadent and delicious.

They are perfect for a special occasion or when you need a little treat. The rich chocolate batter is super simple and the chocolate chips make them extra yummy.

The best part is that the mix only takes a couple of minutes to put together. So you can make several jars at once.

Keep a few in your pantry for later and give the rest away. When it is time to bake the muffins, you just need a bowl, a spatula, and 3 ingredients you likely already have on hand.

It really doesn’t get much easier than that. I also made some Christmas coffee mix to go with the muffins.

The combination was delicious. Give them together along with some cute kitchen linens, a fun spatula, and/or cupcake liners to make an extra nice gift.

Signature that says Enjoy! Carlee.

Prep: 10 minutes
Cook: 15 minutes
Total: 25 minutes

Ingredients

Homemade Muffin Mix

  • ¼ teaspoon salt
  • cups light brown sugar packed
  • cup cocoa powder
  • 1 cup chocolate chips

To Make The Muffins

  • 2 large eggs
  • ¾ cup milk
  • ½ cup vegetable oil

Instructions

Making The Muffin Mix

  • In a medium bowl, stir together the 1¾ cups all-purpose flour, 1 teaspoon baking soda, and ¼ teaspoon salt until well mixed. Transfer the mixture into a quart jar.
  • Layer the 1¼ cups light brown sugar on top of the flour. Gently press down to make room for the other ingredients.
  • Layer the ⅔ cup cocoa powder and 1 cup chocolate chips on top and securely fasten the lid on the jar.
  • Add a tag or label with the baking instructions for later. Store at room temperature for up to a couple of months or freeze for up to a year.

Making The Muffins

  • Preheat your oven to 350℉ and grease or put paper liners in 16 muffin wells.
  • In a large bowl, stir together the 2 large eggs, ¾ cup milk and ½ cup vegetable oil.
  • Add the contents of the jar to the wet ingredients. Stir until just combined.
  • Scoop about 3 Tablespoons of batter into each line. A large cookie scoop works well for this.
  • Bake for 15-20 minutes.

Notes

You can store homemade mixes at room temperature for several months. Make sure the container is sealed tight to prevent moisture from getting in. Store the mix in the freezer for up to a year.

Make sure to tie a tag on the jar with the baking instructions!

To make these mocha muffins, add 2 teaspoons of instant coffee granules to the jar. It adds a great layer of flavor!
