This homemade double chocolate muffin mix in a jar is a great gift. Make some extras to keep in your own pantry as well. That way you can have a tasty homemade breakfast treat in a matter of minutes!
In a medium bowl, stir together the 1¾ cups all-purpose flour, 1 teaspoon baking soda, and ¼ teaspoon salt until well mixed. Transfer the mixture into a quart jar.
Layer the 1¼ cups light brown sugar on top of the flour. Gently press down to make room for the other ingredients.
Layer the ⅔ cup cocoa powder and 1 cup chocolate chips on top and securely fasten the lid on the jar.
Add a tag or label with the baking instructions for later. Store at room temperature for up to a couple of months or freeze for up to a year.
Making The Muffins
Preheat your oven to 350℉ and grease or put paper liners in 16 muffin wells.
In a large bowl, stir together the 2 large eggs, ¾ cup milk and ½ cup vegetable oil.
Add the contents of the jar to the wet ingredients. Stir until just combined.
Scoop about 3 Tablespoons of batter into each line. A large cookie scoop works well for this.
Bake for 15-20 minutes.
Notes
You can store homemade mixes at room temperature for several months. Make sure the container is sealed tight to prevent moisture from getting in. Store the mix in the freezer for up to a year.

To make these mocha muffins, add 2 teaspoons of instant coffee granules to the jar. It adds a great layer of flavor!
