I am really having fun with this recipes in a jar series. There are so many fun things you can make.

Whether you are doing it for meal prep and keeping the mixes for yourself or you are making them to give away, they are such a great way to do a little bit of work now to save yourself work (and thought!) later.

I love giving food gifts. They are something that most everyone appreciates, even the person who has everything.

Mixes like this are also a great token of appreciation without breaking the bank. They are great for teacher gifts, neighbors, or as a hostess gift.

This pancake mix comes together in just a couple of minutes. Then you can store it away for when you need a quick breakfast.

When you are ready, just add a little bit of milk, an egg, and a bit of oil. You will be sitting down to a batch of homemade cinnamon pancakes in no time.

I hope to be sharing a regular pancake mix recipe that is based on our favorite homemade pancakes soon. However, this cinnamon version brings a little extra something to the mix.

They would be fabulous with maple syrup. However, we made some apple cider syrup to go with them and that combination was absolutely wonderful.

If you really want to make someone feel special, give them a little jar of apple cider syrup (or maple syrup) along with the pancake mix. Then they will really have something to look forward to.

To make the gift a little bit more substantial, you could tie a whisk to the jar or add a spatula to the mix. Maybe tuck it in a bowl with some pretty kitchen linens if you want to go all out.

Don’t forget to include the directions for making the pancakes. I like using plain brown craft tags for this.

Alright, let’s get to it and make some cinnamon pancake mix!

Prep: 5 minutes
Cook: 0 minutes
Total: 5 minutes

Ingredients

Cinnamon Pancake Mix

  • 3 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 Tablespoons baking powder
  • 1 Tablespoon ground cinnamon
  • 1 teaspoon salt

To Make The Pancakes

  • cup milk
  • 1 large egg
  • 2 Tablespoons neutral cooking oil
  • 1 cup cinnamon pancake mix

Instructions

To Make The Mix

  • In a large bowl, stir together the flour, sugar, baking powder, cinnamon and salt. You want it to be well mixed and clump free.
3 cups all-purpose flour, ¼ cup granulated sugar, 2 Tablespoons baking powder, 1 Tablespoon ground cinnamon, 1 teaspoon salt
  • Transfer the mix into a quart jar or other airtight container. Add a tag with the instructions.
  • You can store this mix at room temperature for several months. Make sure the container is sealed tight to prevent moisture from getting in. You can store the mix in the freezer for up to a year.

To Make the Pancakes

  • In a medium bowl, stir together the milk, egg, and oil.
⅔ cup milk, 1 large egg, 2 Tablespoons neutral cooking oil
  • Add 1 cup of pancake mix to the wet ingredients. Stir until just combined.
    1 cup cinnamon pancake mix
  • Scoop about ¼ cup of batter onto preheated skillet and cook for a couple of minutes. The pancake is ready to flip when the batter stops bubbling and the edges look set.
  • Cook on the second side for about a minute, or until the bottom is golden.

Notes

Each cup of pancake mix will yield about 4-6 pancakes depending on size. Quart size mason jars hold approximately 4 cups of bulk pancake mix.
