While I love summer and all of its fresh produce, it is hard not to look forward to fall and apples. We have a local orchard that has the absolute best apple cider and cider slushies.

So, when I made a couple of batches of homemade cinnamon pancake mix, I thought it would be fun to bring in the flavor of apples. The easiest way to keep the mix shelf stable was to put the apples on top.

This homemade apple cider syrup was the perfect way to do it! It has a concentrated flavor with the perfect consistency for drizzling over pancakes.

There is a hint of cinnamon and the butter adds richness and body. All together, it is a wonderful fall upgrade.

If you are making some jars of the cinnamon pancake mix to give as gifts this fall, consider making some apple cider syrup to gift with it. They are the perfect combination!

  • 2 Tablespoons cornstarch
  • ½ teaspoon pumpkin pie spice
  • 2 cups apple cider
  • 1-2 Tablespoons apple cider vinegar optional
  • cup butter

1 cup granulated sugar, 2 Tablespoons cornstarch, ½ teaspoon pumpkin pie spice
  • Add the apple cider and apple cider vinegar. Stir to combine.
2 cups apple cider, 1-2 Tablespoons apple cider vinegar
  • Heat the mixture over medium heat until it comes to a boil. Stir constantly and continue to boil gently for about 5 minutes.
  • Remove from the heat and stir in the butter.
    ⅓ cup butter
  • Use right away or store in an airtight container. It can be stored in the fridge for up to a month or frozen for up to a year. Just gently warm and stir before using.

Notes

You can use cinnamon  or apple pie spice in place of the pumpkin pie spice if you would like.
The apple cider vinegar helps to keep the sweet-tart notes of the apple cider present. Add to taste depending on how sweet or sweet-tart you would like the syrup.
