Whether you are looking to do a little bit of meal prep now to save yourself work later, or you are looking to make some fabulous edible gifts, this homemade cinnamon pancake mix is just the thing. Make a jar or two today for an easy breakfast later.
In a large bowl, stir together the flour, sugar, baking powder, cinnamon and salt. You want it to be well mixed and clump free.
Transfer the mix into a quart jar or other airtight container. Add a tag with the instructions.
You can store this mix at room temperature for several months. Make sure the container is sealed tight to prevent moisture from getting in. You can store the mix in the freezer for up to a year.
To Make the Pancakes
In a medium bowl, stir together the milk, egg, and oil.
Add 1 cup of pancake mix to the wet ingredients. Stir until just combined.
Scoop about ¼ cup of batter onto preheated skillet and cook for a couple of minutes. The pancake is ready to flip when the batter stops bubbling and the edges look set.
Cook on the second side for about a minute, or until the bottom is golden.
Notes
Each cup of pancake mix will yield about 4-6 pancakes depending on size. Quart size mason jars hold approximately 4 cups of bulk pancake mix.
