If a recipe calls for baking soda or baking powder, feel free to use discard if you want to. The leavening agents will help the recipe to rise, so the wild yeast doesn’t have to be super active.
Sourdough starter discard can still offer the same benefits of active starter when allowed to ferment. You can make the batter or dough for most of the recipes the night before and let it ferment overnight in the fridge.
