Easy 4 Ingredient Lemon Pie

This creamy 4 ingredient lemon pie is so easy to make. Plus, it is no bake, so it is a perfect summer treat.

If you are looking for a cool and creamy summer dessert, you are in the right place. This super simple lemon pie comes together in just a few minutes. The hardest part is waiting for it to chill.

My husband absolutely loves my grandma’s frozen key lime pie. She usually makes him one for his birthday, and it is what he’ll request if asked what he wants for dessert.

Little Dude loves it, too. Luckily, it is easy to make.

So when she requested a lemon pie for her birthday this year, we decided to adapt her recipe and make it lemon. I don’t know why we didn’t do it sooner!

This pie really is about perfect. If you have a mixing bowl and a spatula, you can put it together.

Making Lemon Pie With Condensed Milk

We used a premade graham cracker crust for simplicity. Plus, the plastic insert works great as a lid for transport.

Of course, you can make your own crust with graham cracker crumbs and butter. Crushed vanilla wafers or gingersnaps would be good options as well.

The filling just takes a can of sweetened condensed milk, and 8 oz. tub of Cool Whip (or similar) and a lemon. Add the lemon zest along with the juice for even bigger lemon flavor.

If you don’t have a fresh lemon, you can use a third of a cup of bottled lemon juice instead. However, the fresh lemon juice does taste better, and it only takes a minute or two to juice it.

Just mix everything together and spoon into the crust. Then chill it for at least a couple of hours.

You can make the pie a day in advance if your want it to really set up. Just put a cover on it and put it in the refrigerator.

This no bake lemon pie is also great frozen. Again, you will want to give it several hours in the freezer before serving.

That’s all it takes! You can be digging into a cold piece of lemon heaven as soon as it is done chilling.

4 Ingredient Lemon PIe

This is the easiest no bake lemon pie out there. It is creamy, citrusy, cold and oh so delicious. You can serve it chilled or even frozen for a perfect summer dessert.
Prep: 5 minutes
Additional Time 2 hours
Total: 5 minutes

Ingredients 

  • 1 9 inch graham cracker crust
  • 14 ounces sweetened condensed milk
  • 8 ounces Whipped Topping
  • 1 lemon (or about ⅓ cup lemon juice)

Instructions 

  • Zest and juice the lemon.
  • In a large mixing bowl, stir together the whipped topping, sweetened condensed milk, lemon juice and lemon zest.
    14 ounces sweetened condensed milk, 8 ounces Whipped Topping, 1 lemon
  • Spread lemon filling mixture in graham cracker crust.
    1 9 inch graham cracker crust
  • Chill or freeze for at least 2 hours.
  • Serve cold or frozen.

Notes

If you want to use bottled lemon juice, use 1/3 cup of lemon juice.

    I tried this exactly as written. Even after 4 hours in the fridge, the filling flowed out as soon as I cut and plated a piece. The flavor is fantastic but it runs too much.

    1. I’m sorry that happened. I know its disappointing when it doesn’t set. I wish I had a good answer for you. If you want to make it again, I’d suggest freezing it. The pie is fabulous that way too!

    I tried it exactly per recipe. Although great flavor, it was very loose. It did not stand up after cooling for 4 hours but instead oozed across the plate. How do I stiffen it?

    1. I would put it in the freezer next time. It doesn’t freeze super firm, it is still creamy. Plus it is extra refreshing that way.
