If you are looking for a cool and creamy summer dessert, you are in the right place. This super simple no-bake key lime pie comes together in just a few minutes. The hardest part is waiting for it to chill.

It is a little bit surprising that it took me this long to post this recipe. My husband fell in love with it when he had it at my grandma’s house very early in our relationship.

Since then, my grandma has made them for his birthday. He and Little Dude have requested the pie randomly throughout.

But we already had a classic baked key lime pie and a no bake key lime pie with cream cheese recipe that are both hits. (Not to mention the key lime ice cream and no bake key lime cheesecake jars.)

So, when it came time to share this recipe, I used lemon juice for a little variety. That’s how the creamy no bake lemon pie was born.

Anyway, Little Dude requested this pie… again. So, I decided it was a crime to keep it from you any longer.

It is so simple to make and really delicious. You will find yourself making it again and again as well.

Making the Pie

We almost always use a store bought graham cracker crust to keep things simple. However, you can make your own.

If you are making your own, feel free to play with different types of cookie crumbs. Of course, graham crackers work, but so do vanilla wafers, golden Oreos, or even gingersnaps.

The filling is super simple. Just stir together some key lime juice and sweetened condensed milk.

It will be loose right at first, but it will start to thicken up almost immediately. The acid in the juice reacts with the condensed milk to make it thick again.

Once you have that mixture stirred together, add a tub of Cool Whip. Mix that up and put it in the crust.

It should be thick enough that you can almost serve it right away, but of course, it will set a bit more with some chilling. You can put it in the fridge, or do what we do and freeze it.

We like to keep it in the freezer and steal a slice when we need something cold and delicious. We are all sad when it’s gone.

I hope you give this recipe a try. Maybe it will become a favorite in your family like it has in ours!

So easy to make and tasted yummy. Made it with real key limes but tonight I’m making it with bottled key lime juice. Hope it’s as good!
