Make this quick and easy taco soup is so easy and really family friendly. You can make the whole thing right in the pressure cooker.
As written it’s not super spicy, there is just enough to make it interesting. You can easily warm it up if you want to. Then load it up with your favorite toppings for a fun and easy meal.
We are heading into soup season and I’m excited about it. I love the simplicity of most soup recipes and the coziness of cuddling up with a warm bowl.

This particular soup has the lovely flavors of tacos. The addition of pasta helps make it more filling and makes it kid friendly as well.
It is perfect for a fast and easy weeknight meal for the family. It is also great for game day or tailgating.
It’s a nice alternative to chili while watching football. Or make some as a fun way to change up taco Tuesday.

My husband doesn’t believe soup counts as dinner. There has to be something more.
A nice quesadilla is a great addition that helps raise this soup to full meal status for him. You could also have some chips and guacamole on hand if you prefer.
Easy Additions
This soup is great and family friendly as written. Adding any of the following options would have made it less popular at my dinner table.
I would love to add any of these yummy ingredients and I highly suggest you do if your family likes them!
Black beans are a great way to add substance and fiber. Mix in a can of rinsed and drained beans at the same time you add the pasta.

A cup of corn would be another lovely addition. Again add it at the same time as the broth and pasta.
Feel free to stir in a little salsa if you’d like.
The beauty of recipes like this is they are a great starting point. Soups are pretty hard to mess up so use the recipe as a start and customize to your heart’s desire.
Fun Topping Ideas
The best part of tacos, burritos or nachos is the toppings! We feel the same about a nice bowl of chili.
This soup is similar. It is great on its own but even better with yummy stuff on top.
Of course a sprinkle of cheese on top is a great easy way to take this to the next level.
A dollop of sour cream adds that cool creamy zing.
A sprinkle of cilantro adds that fresh pop of flavor.

Stir in a spoonful of salsa if you would like or sprinkle it with some chopped tomatoes.
Some pickled jalapenos can bring some heat to an individual bowl if your family has different heat tolerances.

Taco Soup in the Instant Pot
Ingredients
- 1 Tablespoon oil
- 1 lb. ground beef
- 1 medium onion chopped
- 2 roma tomatoes chopped
- 1 jalapeno diced
- 1 package taco seasoning
- red pepper flakes to taste
- 12 oz shell noodles about 3/4 package
- 32 oz beef broth
- 6 cups water
Instructions
- Set Instant Pot to "Saute" function and let it heat up.
- Add olive oil and ground beef.
- Sautee for a few minutes until beef starts to brown.
- Add in the onions and saute until soft and fragrant.
- Once meat is browned and onions are soft, add the tomatoes, jalapeno, taco seasoning, and red pepper flakes.
- Stir and then add noodles, beef broth, and water.
- Seal and lock the lid.
- Turn Instant Pot to Soup Function or High Pressure and set cook time to 10 minutes.
- Press start.
- Once done cooking, manual release the steam and unlock the lid.
- Serve soup hot with toppings of choice: cheese,sour cream, hot sauce
