Making the Soup
It starts with Italian sausage, so you get big flavor without a ton of effort or ingredients. Small things like that can make such a big difference in making mealtime approachable on a busy night.
Just brown it and some chopped onion using the saute function on the instant pot. Roughly chop a bag of spinach and toss that in along with some broth.


Now add some cheese tortellini. The sausage and cheesy pasta combination is sure to win over non-soup lovers like my husband.
It just takes a few minutes of cooking under high pressure and the soup is almost done. Stir in a little half and half or a milk and cornstarch slurry and dinner is ready!
Serving Your Soup
This soup can definitely be a meal on its own. It is filling enough and has a whole bag of spinach inside.
However, you can add a a green salad if you would like. It makes the meal feel more substantial and adds more greens.

Or make some garlic bread for the carb lovers. A nice paninini or grilled cheese will help to satisfy even the biggest appetites.
Storing and Reheating Soup
The leftover soup will store for several days in the refrigerator. I like to portion it into individual servings and just grab one for lunch each morning.
It is easy to reheat in the microwave at work. However you could reheat it in a saucepan on the stove if you prefer.
Making This Soup on the Stove
If you don’t have an instant pot, don’t despair. You can still make this delicious soup.
Just brown the sausage and onions in a soup pan over medium heat. Add the broth, spinach and tortellini.

Cook it for the number of minutes listed on the tortellini packages. You may need to ask a little more water or broth because you will lose more volume to steam.
Now add the half and half or milk and cornstarch slurry. Heat it until it just starts to simmer and serve.

Creamy Tortellini Sausage and Spinach Soup in the Instant Pot
Ingredients
- ½ yellow onion diced
- 1 lb. Italian sausage. Mild or hot
- 1½ teaspoons of garlic powder
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 2 teaspoons of Italian seasoning
- 19 oz of cheese tortellini
- 7 cups of chicken broth
- 8 oz. fresh spinach roughly chopped
- ½ cup of shredded parmesan
- 2 cups of half and half*
Instructions
- If your sausage is in links, remove the meat from the casings.
- Set instant to sauté. Add sausage and diced onion.
- Cook until the onions are translucent and the sausage is browned. Feel free to leave the sausage in bigger chunks if desired.
- Add the broth, tortellini, spices, garlic, and spinach. Close and seal the lid and pressure valve. Cook on high pressure for 4 minutes
- Quick release pressure and remove lid. Stir in half and half and Parmesan cheese and let cool and thicken.
- Serve with additional Parmesan cheese if desired.
