Pulled pork stuffed potatoes are the perfect mix of succulent savory pulled pork and fluffy baked potatoes. They are a great way to use leftover pulled pork or make some just to make these beauties.

When serving a crowd, we often turn to pulled pork to get the job done. It is one of those entrees that lends itself to big quantities.

Ingredients including russet potatoes, pulled pork, melted butter, cheese, salt, pepper, bbq sauce, sour cream, pickled jalapenos, and salt and pepper ready to be made into stuffed baked potatoes.

But when the event is done, we often find ourselves with plenty of leftovers. Luckily, we love leftovers, and I love to turn them into something new.

Because you can only have so many pulled pork sandwiches before you need something new. So we usually freeze some to turn into recipes using pulled pork later.

Loading baked potatoes with some pork is a great way to change it up. It doesn’t take a lot of time either.

If you don’t feel like turning on the oven, you can always cook the baked potatoes in an Instant Pot or the microwave. Use your favorite potato cooking method.

Pulled Pork Stuffed Baked Potatoes

  • 2 large russet potatoes
  • ½ cup pulled pork
  • ½ cup shredded cheese
  • 4 Tablespoons unsalted butter
  • 4 Tablespoons BBQ sauce
  • 3 Tablespoons sour cream
  • 2 Tablespoons pickled jalapenos
  • 1 Tablespoon chopped chives
  • salt & pepper to taste


  • Preheat the oven to 450℉.
  • Wash and dry the potatoes. Use a fork to poke holes all around the outside of the potatoes.
    2 large russet potatoes
  • Place the potatoes on a rack that sits over a baking sheet. Brush with a Tablespoon of melted butter and sprinkle with salt and pepper.
  • Bake for about 55 minutes or until fork tender.
  • Split the potatoes and lightly fluff the inside of each potato with a fork.
  • Drizzle the remaining melted butter on the inside of the potatoes and sprinkle with a bit more salt and pepper.
    4 Tablespoons unsalted butter
  • Sprinkle each potato with half the shredded cheese.
    ½ cup shredded cheese
  • Place half the pulled pork on each potato.
    ½ cup pulled pork
  • Drizzle with your favorite BBQ sauce.
    4 Tablespoons BBQ sauce
  • Place the jalapenos on top and drizzle sour cream over the top of them.
    3 Tablespoons sour cream, 2 Tablespoons pickled jalapenos
  • Garnish with a bit of chopped chives and enjoy!
    1 Tablespoon chopped chives


  • I do not recommend storing these assembled. You can make everything ahead of time, but wait to assemble and reheat until you are ready to enjoy them. 
  • You can use your favorite method for baking the potatoes, it doesn’t have to be the oven. This is totally up to you.
  • The amount of sour cream, BBQ sauce, jalapenos, and salt/pepper is totally up to your preferences. Use as much or as little as you would like.
  • You can use your favorite shredded cheese. Cheddar, montery jack, and colby Jack are all great options.
  • Be sure to use your favorite BBQ sauce for this recipe as it will have a strong flavor presence.
