Pulled Pork Stuffed Baked Potatoes

Ingredients

large russet potatoes
½
cup
pulled pork
½
cup
shredded cheese

Tablespoons
unsalted butter

Tablespoons
BBQ sauce
3
Tablespoons
sour cream
2
Tablespoons
pickled jalapenos
1
Tablespoon
chopped chives
salt & pepper
to taste
Instructions
Preheat the oven to 450℉.
Wash and dry the potatoes. Use a fork to poke holes all around the outside of the potatoes.
Place the potatoes on a rack that sits over a baking sheet. Brush with a Tablespoon of melted butter and sprinkle with salt and pepper.
Bake for about 55 minutes or until fork tender.
Split the potatoes and lightly fluff the inside of each potato with a fork.
Drizzle the remaining melted butter on the inside of the potatoes and sprinkle with a bit more salt and pepper.
Sprinkle each potato with half the shredded cheese.
Place half the pulled pork on each potato.
Drizzle with your favorite BBQ sauce.
Place the jalapenos on top and drizzle sour cream over the top of them.
Garnish with a bit of chopped chives and enjoy!
Notes
I do not recommend storing these assembled. You can make everything ahead of time, but wait to assemble and reheat until you are ready to enjoy them.
You can use your favorite method for baking the potatoes, it doesn’t have to be the oven. This is totally up to you.
The amount of sour cream, BBQ sauce, jalapenos, and salt/pepper is totally up to your preferences. Use as much or as little as you would like.
You can use your favorite shredded cheese. Cheddar, montery jack, and colby Jack are all great options.
Be sure to use your favorite BBQ sauce for this recipe as it will have a strong flavor presence.
