Chicken Noodle Soup (With Instant Pot and Slow Cooker Directions)

Make classic chicken noodle soup with the help of an instant pot or slow cooker. This recipe gives you all of the flavor you want in the simplest of ways.

Sometimes life calls for chicken noodle soup. It is a cure for so many of life’s ailments.

Whether you are just cold or have a cold, chicken soup is the answer. If you are sad or anxious, chicken soup can be like the warm hug you need.

I think it has to do with the nostalgia. A bowl of soup is a reminder of those times when mom or grandma swooped in to take care of you.

Making chicken noodle soup in the instant pot

One of the benefits of making soup in the instant pot is you can start with frozen chicken breasts. There is no need to think ahead and thaw the meat.

Just cook the meat in the broth right in the pressure cooker. It adds flavor to the broth and gets cooked to tender in a jiffy.

Once the meat and vegetables are cooked, it only takes a few minutes to finish the noodles. Then you will be enjoying a bowl of soup in no time.

Making chicken soup in a crockpot

Using a slow cooker to make the soup is just as easy, it just takes longer. You can let the chicken, vegetables and broth cook while you go about your day.

When you get home, just add the pasta and cook on high for about a half hour. They will be tender, delicious and ready to eat.

For a thicker soup, try making crockpot chicken and noodles instead. It has similar nostalgic feelings, but in a different way.

Ideas for additions or alterations

If you like celery in your soup, add it with the carrots. We just prefer our soup without.

You can also add a bay leaf with the chicken. Just be sure to remove it before serving the soup. It will be easier to find and remove before you add the pasta.

If you prefer rice to pasta, just add about a cup of rice after the chicken is cooked. It will take a few more minutes to cook than the noodles, but not many.

If you want to use leftover chicken, add it at the end. You don’t want grainy overcooked chicken.

Homemade Chicken Noodle Soup

Ingredients 

  • pounds skinless boneless chicken
  • 1 medium onion diced
  • 1 cup diced carrots
  • 6 cups chicken stock
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon dry thyme
  • 8 oz. wide egg noodles

Instructions 

Instant Pot Directions

  • Put 1¼ pounds skinless boneless chicken, 1 medium onion, 1 cup diced carrots, 6 cups chicken stock, ½ teaspoon garlic powder, 1 teaspoon salt, ¼ teaspoon ground black pepper, and ¼ teaspoon dry thyme in the Instant Pot.
  • Cook on high pressure for 12 minutes. Quick release the pressure.
  • Remove chicken to a cutting board and add 8 oz. wide egg noodles to the pot.
  • Cook on high pressure for 1 minutes, then quick release. Meanwhile, dice or shred the chicken.
  • Return the chicken back to the pot. Adjust the seasonings to your liking and serve.

Slow Cooker Directions

  • Add 1¼ pounds skinless boneless chicken, 1 medium onion, 1 cup diced carrots, 6 cups chicken stock, ½ teaspoon garlic powder, 1 teaspoon salt, ¼ teaspoon ground black pepper, and ¼ teaspoon dry thyme to slow cooker. Cook on low for 4-6 hours or high for 2-4 hours.
  • Remove the chicken to a cutting board and add the 8 oz. wide egg noodles. Cook on high for 20 minutes.
  • Dice or shred the chicken and add back to the pot. Adjust the seasoning and serve.

Notes

Feel free to add diced celery and a bay leaf to the pot if desired. (Add with the other veggies and seasonings.) Just be sure to remove the bay leaf before serving.
