As the weather cools down, soups become a welcome sight at the dinner table. Well, they do for me anyway.
My husband doesn’t think soup qualifies as a meal. He needs at least a grilled cheese or something to go with it to make it count as a meal.

Your crock pot will cook the broth filled with tender chicken and veggies while you go about your day. When you get home add some pasta and it’ll be ready in no time.

We like using a whole wheat rotini in this soup. It adds that little extra bit of fiber.
You can use whatever you like best. Just be sure it is a pasta shape that fits well on your spoon!

I know, I know. This probably seems a bit out of character.
I mean it’s not a big chocolate cake or anything. But as unbelievable as it may be, we do eat real food every day around here.
Shockingly that includes vegetables, fruits and healthy soups. Because it’s good for us and I do have jeans to fit into. I mean, priorities, right?!

So on a busy day when we want something flavorful, healthy and easy this fits the bill. A few minutes of chopping and prepping and you are off.
Even better, chop and prep the night before. Then all you have to do is wake up, dump everything in the slow cooker and go on about your day.
The best part is coming home to dinner that is almost ready to go. Throw in some pasta, crank’er up and kick off your shoes.
Before you know it you’ll have a hot bowl of soup in your hand and a smile on your face. Just like that!
Even better yet, the flavors and the pasta are kid friendly too. It is a dinner everyone will love without any fuss!
Easy substitutions or changes
You can easily add more vegetables to this soup if you would like. Chopped zucchini would be delicious, just add it at the same time as the chicken and peppers.
For a more pasta Faggioli feel, add a can of white beans to the mix. They would be a fabulous addition!

Slow Cooker Chicken Cacciatore Soup

Ingredients
- 2 teaspoons garlic powder
- 2 green or red bell peppers, diced
- 14.5 oz can finely diced tomatoes
- 15 oz can tomato sauce
- 1.5 pounds chicken breast, cubed
- 6 cups chicken broth
- 1/4 cup dry minced onions
- 1 Tablespoon sweet basil
- 1 Tablespoon oregano
- pinch red pepper flakes
- 8 oz dry whole wheat rotini pasta
Instructions
- Put all ingredients but the pasta into your slow cooker. Cook on low for 7 hours or high for 4 hours.
- Turn slow cooker to high if it isn't already, then add the pasta to the soup. Continue to cook on high for 30 minutes or until pasta is al dente.
- Serve garnished with Parmesan or mozzarella cheese.
