If your sausage is in links, remove the meat from the casings.
Set Instant Pot to sauté. Add sausage and diced onion.
Cook until the onions are translucent and the sausage is browned. Feel free to leave the sausage in bigger chunks if desired.
Add the broth, tortellini, spices, garlic, and spinach. Close and seal the lid and pressure valve. Cook on high pressure for 4 minutes
Quick release pressure and remove lid. Stir in half and half and Parmesan cheese and let cool and thicken.
Serve with additional Parmesan cheese if desired.
Notes
*You can use 2 cups of milk mixed with a generous teaspoon of cornstarch if you don't have half and half. Just bring the mixture to a light boil to thicken before serving.
