Last time I asked what kind of recipes you would like to see more of, the answers were almost all crockpot recipes. So, I have tried to give you some more of those.
The other request was for more grab and go breakfast recipes. We have a busy life and mornings get hectic, so I totally understand this request.
I love having a variety of muffins in the freezer for easy breakfast options. You can microwave one for a few seconds and it is as good as new.


The problem is that some muffins might as well be cupcakes. Not that there is anything wrong with that, but there are some more nutritious options.
I like having a mix of sourdough chocolate chip muffins, oatmeal raisin muffins, and others that have a bit of fiber and goodness in them to choose from.

I also love the texture of creamy overnight oats. Adding fruit is always good too. So, peach overnight oats are fabulous during the summer.


I started making these peanut butter overnight oats about a month ago. I wanted to up the protein a bit and include one of my favorite flavors.
The chocolate chips are optional, but make the oats even more fun! It definitely feels like a treat.

Peanut Butter Overnight Oats
Ingredients
- ¾ cup old fashioned oats
- 2 Tablespoons chia seeds
- ¾ cup milk of your choice
- ½ cup vanilla yogurt
- 2 Tablespoons peanut butter powder
- 2 Tablespoons chocolate chips
Instructions
- Mix everything together in a bowl or jar.
- Chill for at least 2 hours but up to 5 days.
- Stir before enjoying.

Definitely don’t use steel cut. Either instant or old-fashioned work great.
