Banana Bread Overnight Oats

Busy mornings call for quick grab and go breakfasts. A jar of creamy banana bread overnight oats is a tasty, nutritious, make-ahead option you’ll look forward to having. It only takes a few minutes to make and the prep work is all done the night before.

Mornings are hard enough as it is, making breakfast on top of everything else can sometimes feel like too much. Just ask LD, he’ll tell you!

That is where creamy overnight oats come in. You make the decision and do the couple of minutes of prep that they require the night before.

In the morning all you have to do is grab it from the fridge and get a spoon. It doesn’t get easier than that!

We have tried several different flavors over the years. Strawberry overnight oats and peach overnight oats are perfect for spring and summer.

Peanut butter overnight oats have been my latest obsession. Then came these banana bread oats.

They have all of the flavors of our favorite banana bread recipe, but in a jar and without the oven. Plus they are really simple to put together.

If you want to, you can make a few at once. They will stay good for several days in the fridge, so you can batch the work.

If you find you like your oats a bit sweeter, just add a bit more maple syrup. Depending on how sweet your banana is, you may find that you want a little bit more.

Luckily, you can easily stir some in when you are eating it if you find that you want a little bit more. You can also use other sweeteners, but there is something really special about the flavor of maple syrup with the banana and cinnamon that makes this fabulous.

Banana Bread Overnight Oats

If you like bananas and oatmeal, this banana bread overnight oats recipe is for you. It is full of banana bread flavor, but is simple to make and you don't have to turn on the oven. It is a flavorful way to do the prep work ahead of time and start the day off right.

Total: 4 hours 5 minutes

Ingredients 

  • 1 ripe banana
  • ½ cup old fashioned oats
  • ½ cup whole milk
  • 2 Tablespoons chopped pecans optional
  • 2 teaspoons maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 pinch salt

Instructions 

  • Place the 1 ripe banana in a pint jar and smash it well.
  • Add the ½ cup whole milk and ½ cup old fashioned oats to the jar and stir until combined.
  • Mix in the 2 teaspoons maple syrup, 1 teaspoon vanilla extract, 1 pinch salt, ½ teaspoon ground cinnamon, and 2 Tablespoons chopped pecans.
  • Put the lid on the jar and chill in the fridge for at least 4 hours, but preferably overnight.
  • We usually enjoy it cold. Just stir and eat. However, you can warm it up for a minute or so in the microwave if you prefer.

Notes

You can store the oats in sealed mason jars in the fridge for up to 5 days. Do not freeze. They are perfect for making a several at a time to enjoy throughout the week.
