If you like bananas and oatmeal, this banana bread overnight oats recipe is for you. It is full of banana bread flavor, but is simple to make and you don't have to turn on the oven. It is a flavorful way to do the prep work ahead of time and start the day off right.
Place the 1 ripe banana in a pint jar and smash it well.
Add the ½ cup whole milk and ½ cup old fashioned oats to the jar and stir until combined.
Mix in the 2 teaspoons maple syrup, 1 teaspoon vanilla extract, 1 pinch salt, ½ teaspoon ground cinnamon, and 2 Tablespoons chopped pecans.
Put the lid on the jar and chill in the fridge for at least 4 hours, but preferably overnight.
We usually enjoy it cold. Just stir and eat. However, you can warm it up for a minute or so in the microwave if you prefer.
Notes
You can store the oats in sealed mason jars in the fridge for up to 5 days. Do not freeze. They are perfect for making a several at a time to enjoy throughout the week.
