Chewy Maple Peanut Butter Oatmeal Bars

These chewy maple peanut butter oatmeal bars are a great grab and go breakfast or easy snack. They are super simple to put together and have a great chewy granola bar type texture.

With just a 3 simple ingredients and a couple minutes of prep you can have these delicious peanut butter oatmeal bars in the pan setting up. They make a perfect grab and go breakfast for busy mornings. 

You could also serve them with fresh fruit for a leisurely breakfast. Or pack them for an easy answer to the mid afternoon slump or after school treat for the kids!

You could even serve them as a simple dessert for when you need a little something sweet but don’t want to go whole hog. There are just so many great ways to enjoy them!

Adjust the sweetness

You can adjust the amount of maple syrup according to your tastes or how you plan to serve them. Use a little bit less for breakfast or a healthier snack.

If you sweet tooth is calling, add a bit more. Or add a pinch of salt if you want.

These bars are a great no-bake peanut butter alternative to brown sugar oatmeal squares. They have a chewier texture and lots of peanut butter flavor.

They are a little bit like a bar version of no bake peanut butter cookies, but with fewer ingredients. Just like maple peanut butter rice krispie treats, you just cook together some syrup and peanut butter then stir in the oats.

Make them with honey

You can use honey in place of the maple syrup. Honey and peanut butter also go together fabulously!

The hardest part is waiting for them to set up. They are edible right away, but soft and a bit gooey.

After a few hours, they start to get a more solid texture that is more portable. The texture of the oats gets better too, though they taste good the whole time.

Storage

Keep your oat bars in an airtight container at room temperature for up to a week.

Ingredients 

  • 1 cup creamy peanut butter
  • ⅔-¾ cup maple syrup
  • 3 cups old fashioned oats
Makes: 8 x 8inch rectangle

Instructions 

  • Place the 1 cup creamy peanut butter and ⅔-¾ cup maple syrup in a medium to large sauce pan. Cook over medium-low heat until the peanut butter is melted and everything is combined.
  • Stir in 3 cups old fashioned oats.
  • Grease an 8-inch square pan or line it with parchment or wax paper. Spread the warm peanut butter mixture into the pan.
  • Allow to set for several hours. Then cut into squares and serve. The bars will be soft and a bit gooey at first, but the texture will change into more of a chewy granola bar texture as they sit.
  • Store in an airtight container at room temperature.

Notes

  • Adjust the maple syrup depending on how sweet you want your bars to be.
  • Feel free to add a pinch of salt if you want. 
  • Honey works as a great alternative to maple syrup.
