No Bake Oatmeal Cookie Bars

If you like no bake cookies, you are going to love these no bake oatmeal cookie bars. The bars feature layers of brown sugar and oats around a peanut butter and chocolate filling. They are chewy, delicious, and easy to make.

Did you grow up eating chocolate peanut butter no bake cookies? I certainly did and I have always love them.

There is something about that oatmeal chew and all of the chocolate and peanut butter goodness. These bars feature a lot of those same textures and flavors.

Though making them in layers rather than mixing it all together gives you layers of flavor in a wonderful way as well. It is almost as if you are combining brown sugar oatmeal bars and the no bake cookies in the best kind of way.

This recipe is really quick and easy to put together. The hardest part is waiting for it to set up.

Carlee’s Tips and Tricks

This recipe works well with either rolled oats or quick cooking oats. I like the chew of the old-fashioned rolled oats. For softer bars, use quick cooking oats instead.

For stronger peanut butter flavor, increase it a bit. You can easily get away with ¾ cup if you want to.

If you need to avoid peanut butter, any nut butter would work. Almond or sunbutter would be great. I haven’t tried it, but I think cookie butter would be tasty as well!

These bars are on the rich side. So, you can get away with cutting quite a few small squares.

You can store your bars at room temperature if your house is cool. If it is warm, you may want to store them covered in the refrigerator. For longer storage, pop them in an airtight container and freeze them.

I think you should do yourself a favor and give them a try. I don’t think you will regret it!

No Bake Oatmeal Cookie Bars

Chocolate, peanut butter, brown sugar, and oats combine in these delicious no bake cookie bars. They are simple to make and even easier to eat! I think you are going to love these bars.
Prep: 15 minutes
Cook: 2 hours
Total: 2 hours 15 minutes

Ingredients 

  • 1 cup salted butter
  • ½ cup light brown sugar packed
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet chocolate chips
  • ½ cup peanut butter
Makes: 8 x 8inch rectangle

Instructions 

  • Line a square baking dish with parchment paper.
  • In a large saucepan, melt the 1 cup salted butter over medium heat.
  • Add the ½ cup light brown sugar. Bring the mixture to a boil, stirring to dissolve the sugar.
  • Reduce the heat to low and stir in the 1 teaspoon vanilla extract and 3 cups rolled oats. Continue to cook over low heat for 3 minutes, stirring frequently. You want the oats to absorb some of that butter brown sugar goodness.
  • Spoon about half of the oat mixture into the lined baking dish. Spread it out evenly and press down slightly to form the bottom crust.
  • Put the 1 cup semisweet chocolate chips and ½ cup peanut butter in a medium microwave safe bowl. Microwave on high in 30-second intervals, until you can stir it smooth.
  • Pour most of the melted chocolate mixture over the oat crust. Spread to form an even layer. Reserve a little bit to drizzle over the top if desired.
  • Distribute the rest of the oat mixture over the chocolate layer. Press gently to help form cohesive bars. Drizzle with the remaining peanut butter chocolate mixture.
  • Refrigerate for at least 2 hours to set. Then, cut into small squares.

Notes

  • Feel free to use other nut butters.
  • You can use quick-cooking oats instead of rolled oats. Just don’t use steel cut oats. 
  • I have heard of people reducing the butter to ¾ cup, but haven’t tried it myself.
