Change up taco night and make this taco tater tot casserole in a crockpot. You get all of the beefy cheesy goodness you would expect with the ease of a slow cooker recipe. It is going to be a hit with the whole family.

We are huge fans of tacos around here. We love them all… hard shells, soft shells, beef, pork, or chicken. If it tacos, we’ll eat it.
It is nice to get those flavors in a different package every once in a while though. This recipe combines two more favorite dinner categories: crockpot recipes and casserole recipes.
So, this one is really ticking all of the boxes. The seasoned beef cooks in cheese sauce making it extra tasty.
You can use nacho cheese sauce or a jar of plain cheese sauce, whichever you like better. White queso would also be good. They are all cheesy, so there really isn’t any loosing here.


The casserole is great on its own. You can also serve it with your favorite taco toppings.
A dollop of sour cream and a drizzle of salsa is delicious. You could also add some lettuce or jalapeno slices if you want.

Feel free to use your favorite ground meat. Of course, beef is great but ground turkey and ground venison are also delicious options.
As written, this recipe has a high tater tot to meat casserole. It helps to get a filling meal on the table without breaking the bank.


You could also try adding a can of black beans to the filling to stretch it a bit if you want to. Just don’t try feeding it to LD. He isn’t a fan of beans!
For a higher meat to tater tot ratio, either double the filling or don’t use the bottom layer of tater tots. It will be delicious either way.
Tater tots don’t get quite as crispy in a crockpot as they do in the oven. We still think it is tasty, but if the crispy part is your favorite part, you may want to bake it instead.
