These chewy maple peanut butter oatmeal bars are a great grab and go breakfast or easy snack. They are super simple to put together and have a great chewy granola bar type texture.
Place the 1 cup creamy peanut butter and ⅔-¾ cup maple syrup in a medium to large sauce pan. Cook over medium-low heat until the peanut butter is melted and everything is combined.
Stir in 3 cups old fashioned oats.
Grease an 8-inch square pan or line it with parchment or wax paper. Spread the warm peanut butter mixture into the pan.
Allow to set for several hours. Then cut into squares and serve. The bars will be soft and a bit gooey at first, but the texture will change into more of a chewy granola bar texture as they sit.
Store in an airtight container at room temperature.
Notes
Adjust the maple syrup depending on how sweet you want your bars to be.
Feel free to add a pinch of salt if you want.
Honey works as a great alternative to maple syrup.
