We love them as is, but you could broil the topping for a minute or two if you want it to brown up a bit. Serve them with a lemon wedge if desired to brighten it up a bit.

If you are looking for a quick and easy recipe that will help you eat more fish, this Parmesan baked cod is just the thing. It is ready in under 30 minutes and tastes great. You are going to want to make it a staple in your dinner rotation.
Prep: 5 minutes
Cook: 20 minutes
Total: 25 minutes

Ingredients 

  • 2 pounds cod filets
  • cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Worcestershire sauce
  • ¼ cup chopped chives or green onions
  • 2-3 Tablespoons Parmesan cheese

Instructions 

  • Preheat oven to 400℉ and grease a 9×13-inch baking dish.
  • Arrange 2 pounds cod filets in the pan, trying to overlap as little as possible.
  • In a small bowl, stir together the ⅔ cup mayonnaise, ¼ cup grated Parmesan cheese, 1 teaspoon Worcestershire sauce, and ¼ cup chopped chives.
  • Spread mayonnaise mixture over the fish filets.
  • Top with additional 2-3 Tablespoons Parmesan cheese.
  • Bake uncovered for 15-20 minutes or until the fish flakes with a fork.

Notes

You can substitute other herbs for the chives if you would like. You can also try this recipe with different kinds of fish.
If making a half recipe, use an 8×8-inch pan.
