Baked salmon with lemon and dill is easy enough to be a weeknight dinner, but also good enough to serve company. The flavors are simple, but go so well together.

This salmon recipe is so versatile. We have enjoyed it for Christmas Eve dinner, but also on a random Wednesday evening.
It goes together quickly and tastes amazing. So, there is really no wrong time to have it.
The recipe comes from my sister-in-law, Jess. She gave it to my mother-in-law who as also made it for us several times.


Little Dude didn’t used to like salmon, so we didn’t make it much ourselves. But, recently he has had a change of heart.
His increased love of other fish and seafood dishes opened his mind a bit and he decided to try salmon again. Luckily, he enjoyed it.

Tips, Tricks, and Substitutions
We normally make this recipe in the oven, however it would also be great on the smoker. That way you wouldn’t have to heat up the kitchen and it would keep the inevitable fish smell to a minimum.
You can also experiment with different herbs. If you don’t have fresh dill, you can sprinkle the salmon with some dried dill.


Or try using fennel fronds, tarragon, or thyme instead. There are several fresh herbs that go well with salmon.
If herbs aren’t your thing, leave them off. Lemon, butter, salt and a little pepper can make for a delicious slab of salmon.


Baked Salmon with Lemon and Dill
Ingredients
- 3 pound boneless side of salmon skin on or off depending on your preference
- 1 lemon
- 4 Tablespoons butter
- 1 bunch fresh dill
- ½ teaspoon salt
Instructions
- Preheat oven to 400℉
- Place a large sheet of aluminum foil on a rimmed baking sheet. Put fish in the middle of the foil3 pound boneless side of salmon
- Slice the lemon. Squeeze the ends over the fish. Arrange the slices over the salmon.1 lemon
- Cut butter into small pieces and arrange over the fish along with some of the dill.4 Tablespoons butter, 1 bunch fresh dill
- Sprinkle everything with salt.½ teaspoon salt
- Wrap the fish in the foil and bake for about 20 minutes or until flaky.
- Serve with more fresh lemon and dill if desired.
