No Bake Woolworth Cheesecake Bars

Woolworth cheesecake bars are a classic no bake dessert that has such an excellent texture and slight lemon flavor. This recipe is easy to make and tastes wonderful.

If you like your no bake cheesecake fluffy, this is the recipe for you. It is smooth, airy, and really delicious.

You know I love a good recipe suggestion. My husband’s Uncle Doug was the one that gave me this one.

He asked if I had made a lemon Jello cheesecake before. I was instantly intrigued.

All of those words had my interest. My family loves a good no bake cheesecake recipe and you guys seem to enjoy Jello recipes.

He had fond memories of it from his childhood and had recently made it for a small gathering. It was as good as he remembered, so he shared the recipe with me.

I am glad he did. This cheesecake was fun to make and had such a fun texture.

It has a light lemon flavor, but it’s not too much. This is a perfect refreshing dessert for when you don’t feel like turning on the oven!

You can use either chilled evaporated milk or heavy cream in this recipe. The final texture and flavor will be about the same either way.

Just make sure to put the can of evaporated milk in the refrigerator several hours in advance if that is what you plan to use.

A Few Notes

You will want to use full fat cream cheese in this recipe, that will give you the best texture and flavor. Also, use bar cream cheese and not the whipped varieties.

Make sure the cream cheese is good and softened. That will help you to get a nice smooth final texture.

For a thicker cheesecake, make this recipe in an 8-inch square pan rather than the 9×13-inch pan.

Use your imagination and different flavors of Jello if you are feeling adventurous!

Storage

To store Woolworth cheesecake, cover it tightly and place in the fridge. It will be at its best for the first 3 days, but is perfectly edible for up to 5 days.

If you can’t eat it in the first few days, feel free to freeze the extra pieces in airtight containers. Try enjoying these pieces while they are still frozen, it is extra refreshing that way!

No Bake Woolworth Cheesecake Bars

This classic no bake dessert recipe gives you an airy cheesecake with a slight lemon flavor. It is reminiscent of the famous cheesecake that was served at Woolworth's lunch counter.

Ingredients 

  • 3 oz lemon jello powder
  • 1 cup boiling water
  • 3 cups graham cracker crumbs 2 sleeves of crackers
  • ½ cup butter melted
  • 8 oz cream cheese softened
  • 1 cup granulated sugar
  • 5 Tablespoons lemon juice
  • 10 ounces evaporated milk, well chilled or 1½ cups heavy cream

Instructions 

  • Dissolve jello powder in boiling water. Set aside to cool.
    3 oz lemon jello powder, 1 cup boiling water
  • Mix 2 cups of graham cracker crumbs with the melted butter until combined. Press into the bottom of a 9×13-inch pan to form a crust.
    ½ cup butter
  • In a medium bowl, beat the cream cheese and sugar together until smooth. Mix in the lemon juice until combined.
    8 oz cream cheese, 1 cup granulated sugar, 5 Tablespoons lemon juice
  • Stir the cooled jello mixture into the cream cheese mixture.
  • In a separate bowl, whip the evaporated milk or cream until fluffy.
    10 ounces evaporated milk, well chilled
  • Mix the whipped cream or evaporated milk into the cream cheese mixture.
  • Spread the filling over the crust. Sprinkle with the remaining cup of graham cracker crumbs.
  • Chill for at least 2 hours before serving. Store covered in the refrigerator.
