Crust Types
Most cheesecakes are made in a crumb crust. Graham cracker crumbs are traditional, but pretty much any cookie can be processed into crumbs and made into a crust. (Check out the Oreo crust as an example.)
For a truly no bake cheesecake, you will need to add more melted butter to the crumbs. Then press it into a crust and chill it for at least 10 minutes to make it set up.
For a baked crust, you use a little less butter and bake the crust for about 10 minutes. Make sure the crust is completely cooled before adding the filling.
Using lady fingers makes for a pretty scalloped edge crust. You can briefly dunk them in different flavored liquids such as coffee or juice to add another flavor dimension to your cheesecake.
Carlee’s Tips For Make Sure The Cheesecake Sets
Make sure to use full fat cream cheese unless the recipe specifies otherwise. Using light cream cheese can effect the texture of the final product.
Make sure to give the cheesecake plenty of time to chill. It seems ridiculous, but a good 6 to 8 hours in the refrigerator is the key to cutting a nice slice of no bake cheesecake. Some will set up in less time than that, but some really require a nice long chill.
If all else fails, put the cheesecake in the freezer for a bit. This is a last resort strategy, but will help you cut nicer slices in a pinch.
