No Bake Woolworth Cheesecake Bars
This classic no bake dessert recipe gives you an airy cheesecake with a slight lemon flavor. It is reminiscent of the famous cheesecake that was served at Woolworth's lunch counter.

Ingredients

oz
lemon jello powder
1
cup
boiling water
3
cups
graham cracker crumbs
2 sleeves of crackers
½
cup
butter
melted
8
oz
cream cheese
softened
1
cup
granulated sugar

Tablespoons
lemon juice

ounces
evaporated milk, well chilled
or 1½ cups heavy cream
Instructions
Dissolve jello powder in boiling water. Set aside to cool.
Mix 2 cups of graham cracker crumbs with the melted butter until combined. Press into the bottom of a 9x13-inch pan to form a crust.
In a medium bowl, beat the cream cheese and sugar together until smooth. Mix in the lemon juice until combined.
Stir the cooled jello mixture into the cream cheese mixture.
In a separate bowl, whip the evaporated milk or cream until fluffy.
Mix the whipped cream or evaporated milk into the cream cheese mixture.
Spread the filling over the crust. Sprinkle with the remaining cup of graham cracker crumbs.
Chill for at least 2 hours before serving. Store covered in the refrigerator.
