Grinch No Churn Ice Cream

Grinch no churn ice cream is easy to make and beyond fun to serve. It is a perfect treat for Christmas, a Dr. Seuss party or just because.

Combine the delicious flavors of white chocolate and mint in a super creamy ice cream and you know the results will be tasty. Make that ice cream green with red hearts for a festive Grinch inspired dessert that is sure to be a hit!

I was tempted to hold onto this recipe until closer to Christmas. It has the right colors and the theme fits, so it would be a festive addition to the standard cookie spread.

But in the heat of the summer ice cream is always a welcome way to cool down. Plus it is just too much fun not to share now.

So it seemed like Christmas in July would be a fitting time to put it out there. Feel free to make a batch now and another during the holidays!

This recipe combines two of our great loves, ice cream and the Grinch. You may remember Little Dude dressed as the Grinch for Halloween a few years back.

We have seen all three versions of the movie several times. He also had a Dr. Seuss themed birthday party so I could justify fulfilling his request of a Grinch cupcake cake at a summer birthday party.

My husband thinks Christmas should stay in December, so it took some creative theming to make it fly. 😉 Luckily he is a huge ice cream fan, so it doesn’t take much arm twisting to convince him to enjoy a bowl even if it has an off season holiday theme.

Making No-Churn Ice cream

The beauty of no churn ice cream is you don’t have to have an ice cream maker. Of course we have one, but I know that not everyone does and homemade ice cream should be accessible to everyone!

The process is easy. Just whip some heavy cream to a medium to stiff peak, then fold in a can of sweetened condensed milk.

From there you can add whatever flavors or mix-ins you would like. In this case we added a bit of white chocolate pudding mix for body and flavor.

Then a bit of mint flavoring and green food coloring to make it festive. Add some little candy hearts to add that Grinchy twist.

Then freeze the mixture until it is solid and scoopable. Overnight is good, but you can make a batch in the morning and enjoy it that evening.

For an extra fun presentation, add red icing gel heart to the container or each scoop. It really makes it adorable.

Carlee’s Tips and Tricks

Mint flavoring is easy to overdo. Start small and slowly add it a drop or two at a time. Taste as you go and stop when it’s perfect.

If you do go slightly over, don’t despair too much. When the mixture is frozen the flavor will be muted a bit.

The mint flavor is also totally optional. Leave it out if you want to. It just seemed like green ice cream should taste like mint. 🤷‍♀️

A loaf pan makes a great container for freezing the ice cream. Let it set up then cover it with plastic wrap for longer storage.

Grinch No Churn White Chocolate Mint Ice Cream

Ingredients 

  • 2 cups heavy whipping cream
  • 14 ounces sweetened condensed milk
  • 2 Tablespoons instant pudding mix
  • 1 teaspoon mint extract optional
  • Green Food Coloring
  • Red Candy Hearts optional
  • Red Cake Gel

Instructions 

  • Beat 2 cups heavy whipping cream on high until it forms stiff peaks. 
  • Add 14 ounces sweetened condensed milk, 2 Tablespoons instant pudding mix, and 1 teaspoon mint extract and about 10 drops of green food coloring.
  • Mix until well combined. 
  • Keep adding food coloring and mixing until you achieve a dark green.
  • This is the time you can let the kids hide candy hearts in the batter if you choose.
  • Pour the ice cream batter into a loaf pan and smooth out evenly.
  • Draw a heart on top with your red gel.
  • Freeze overnight. 
  • Serve and enjoy!
