Frosting gets even more fun when you add sprinkles! This funfetti buttercream is perfect for topping cakes, cupcakes, cookies and more in a colorful party ready way.

There is just something about sprinkles that screams fun. So adding them to a batch of vanilla buttercream instantly takes it to the next level.

My cookie cake loving sister was coming to town for a visit and we needed a special treat to celebrate. So we thought we would whip up a fun batch of sprinkle filled cookie bars.

The texture of the cookies is soft kind of like lofthouse cookies and they go great with a nice thick layer of frosting on top. While spreading some American buttercream across the bars and tossing on a handful of sprinkles would have been fun, Little Dude and I decided to go whole hog and put sprinkles IN the frosting too.

We started with a base of crusting buttercream and folded in some jimmies style sprinkles. The results are fun with specks of color throughout.

Luckily it is super simple to make and it tastes amazing. It instantly takes your baked goods to the next level.

While it was perfect on the sugar cookie bars, it would also be amazing on your favorite cake. Or put some between a couple of chocolate chip cookies for a fun dessert sandwich.

The possibilities really are endless. And of course this buttercream tastes so much better than the stuff you get in the can at the grocery store.

Tips and Tricks

Making this easy funfetti frosting is super easy to do and it is very forgiving. So it is fabulous for bakers of all skill levels.

The first key is to make sure your butter is soft enough to be easily beaten smooth. You don’t want chunks of butter in your frosting later.

Once the butter is smooth and fluffy, you are ready to add the rest of the ingredients. The only other real key to making the frosting perfect is to get the consistency right before you add the sprinkles.

I personally prefer softer frosting for easy spreading and slightly stiffer frosting for piping. Once the base frosting is perfect, fold in the sprinkles.

Folding them in by hand only takes a minute and will help to keep them whole. That’s it, you are ready to use your buttercream.

Pro tip: If you are going to pipe this frosting, you want to use a tip with a large opening. A big open star tip works well.

You don’t want to use a small tip that will get clogged with the sprinkles. It isn’t worth the headache, so choose wisely.

That’s really about all there is to it. Toss a few more sprinkles on top of the frosting if desired and enjoy your treats!

Ingredients
 

  • ¾ cup butter softened
  • ¾ cup shortening
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 4 Tablespoons milk
  • ¼ cup rainbow sprinkles

Instructions
 

  • Beat butter using paddle attachment until it is smooth and creamy. Add shortening and mix until combined.
    ¾ cup butter, ¾ cup shortening
  • Add powdered sugar, milk and vanilla, mixing on low speed until combined.
    5 cups powdered sugar, 4 Tablespoons milk, 2 teaspoons vanilla extract
  • Turn mixer up to medium speed and beat for at least two minutes. The frosting should be light and fluffy. Add more milk or powdered sugar if necessary to reach your desired consistency.
  • Fold in the sprinkles by hand to keep them from breaking up to much and use on your favorite desserts.

Notes

Buttercream can be stored in an airtight container at room temperature for a day or two. Store it in the refrigerator for up to a week or the freezer for several months.
