Easy Overnight Butterscotch Rolls

If you are looking for a sweet brunch offering that can be prepped ahead, these easy overnight butterscotch rolls are for you. The tender rolls are baked in a mixture of brown sugar, butter, and butterscotch pudding mix for the ultimate caramel roll experience. It is a simple shortcut recipe, but nobody needs to know that but you!

I love a good homemade caramel pecan roll as much as the next sweet tooth (and that is a lot!) They are such a tasty way to end a special breakfast or brunch.

However, sometimes you just don’t have the time to make everything from scratch. This recipe is a great way to get you those same flavors with bit butterscotch-y caramel goodness with a fraction of the effort.

They only take about 15 minutes of prep work to put together. Then, you cover them and let them thaw and proof overnight.

In the morning, all you have to do is stick them in the oven. You have fresh, hot, gooey, fluffy cinnamon buns in about 30 minutes. It really is that easy!

That is part of what makes them perfect for when you have overnight guests. They would also be perfect for holidays like Christmas morning or even Easter.

You get the satisfaction of making your family something they will love without being tied to the kitchen all morning. You get to enjoy the festivities as well.

Recipe History

This recipe was shared with me by a coworker, Jeff. He said that his mother-in-law makes them for special family gatherings and holidays. They are always a big hit with the extended family.

Carlee’s Tips and Tricks

I made two batches, one for folks who love pecans and one for those who don’t. (Luckily I had lots of people to share them with!) You could also just sprinkle pecans on half of the pan.

Spray the aluminum foil with a little nonstick spray before you cover the pan. That way the rolls won’t stick when they rise up and touch it.

Make sure you have a big enough platter ready. You want something with edges to catch any of the hot butterscotch mixture that may try to run off when you dump the rolls.

If you don’t have a platter large enough, use a sheet pan. Or bake the rolls in two 8-inch square baking dishes instead.

You could use a bag frozen cinnamon roll dough in place of the dinner rolls if you prefer. The instructions would be the same otherwise.

If you need to prep the rolls further in advance, you can follow the instructions up to the point where you cover them. Then place them in the fridge for 12-18 hours before baking.

For a more monkey bread style treat, you can bake the rolls in a large Bundt pan. The bake time will take a little bit closer to 35 minutes.

Easy Overnight Butterscotch Rolls

These butterscotch rolls will be a hit at your next brunch. They only take about 15 minutes of prep the night before. Then just wake up and bake them into a delicious buttery caramelly goodness. Everyone is going to love them!
Prep: 15 minutes
Cook: 30 minutes
Proofing Time 8 hours
Total: 8 hours 45 minutes

Ingredients 

  • 1 package Rhodes frozen dinner rolls (24 rolls) or similar
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 3 oz box cook and serve butterscotch pudding mix
  • ½ cup butter
  • ½ cup light brown sugar packed
  • ½ cup pecan pieces

Instructions 

  • Grease a 9×13-inch pan.
  • Arrange 1 package Rhodes frozen dinner rolls (24 rolls) in the pan.
  • Stir together ½ cup granulated sugar, 1 teaspoon ground cinnamon, and 1 3 oz box cook and serve butterscotch pudding mix in a small bowl. Sprinkle over the frozen balls of dough.
  • Melt the ½ cup butter and ½ cup light brown sugar together in a small saucepan over medium-low heat. Once the sugar is dissolved, remove from the heat and drizzle the mixture over the rolls. Sprinkle with ½ cup pecan pieces
  • Spray a sheet of aluminum foil with nonstick spray. Then, tightly cover the pan. Allow to set at room temperature for 5-8 hours or in the fridge for 9-12 hours.
  • Before baking, preheat the oven to 350℉ (and get the rolls out of the fridge if they were in there.) Bake for 30 minutes.
  • Remove the foil and allow to cool for 5-10 minutes before turning the rolls out onto a rimmed platter or cookie sheet. Be careful because the butterscotch mixture will be hot.
  • The rolls are best served fresh warm. However, they can be reheated in the microwave for 10-15 seconds to help refresh them.

Notes

Store extra rolls in an airtight container at room temperature for up to 2 days.
