Snowman Coconut Truffles

These snowman coconut truffles are super cute but really simple, too. The chewy condensed milk and coconut candies are dressed up in their winter finest to look like snowmen. This is going to become your new favorite homemade candy recipe!

If you are looking for a super cute treat to make this winter, you are in the right place! These coconut candies look like snowmen and taste like a dream.

They are perfect for Christmas. Though they can really be festive and seasonal all winter long.

Heck, make a batch in the summer for a cute reminder that cold weather is coming. No matter the reason, just find an excuse to make them soon!

Making the Coconut Candies

Making the truffles themselves is really simple to do. Just make a thickened condensed milk candy mixture in a very similar way to making the famous Brazilian candy brigadeiro.

Instead of adding cocoa powder like we do in chocolate orange brigadeiro or freeze-dried strawberries like in strawberry brigadeiro, you use shredded coconut instead. The coconut and sweetened condensed milk go so well together.

Look for finely shredded coconut if you can find it. If you can’t try using a food processor or blender to shred the coconut a bit more before you use it.

That will make the mixture easier to work with and give the candies a better texture in the end. You may find finely shredded unsweetened coconut in the health food aisles at the grocery store.

In a pinch, the sweetened shredded coconut from the baking aisle will work. Use whatever you can find.

Other than that, making the candy is pretty straightforward. Just make sure you cook the condensed milk until it is thick enough to leave a trail behind your spoon when you are cooking it.

As long as you cook it properly, when it cools, it will have enough body to hold its shape. Of course, we will need those pretty little balls to make the snowmen.

Decorating the Snowmen

Roll the balls of coconut candy in a little bit more finely shredded coconut to give them that snowy look. That will also help to set the shape a little bit more.

Stack three balls on a toothpick to form the basic snowman shape. Then you are ready for the fun part, decorating them!

Use a little bit of melted white chocolate to help glue on some mini chocolate chip buttons. Or you can use the same melted cholate that you use to “paint” on his face.

Try to find some orange sprinkles to use as a carrot nose. Don’t despair if you can’t find them, though.

You can always use a coal nose in a pinch. Or leave the nose off. They will still be cute.

Use a sour candy ribbon to make a scarf. You could also use something like fruit by the foot or anything with a similar ribbon shape.

Let your snowmen get good and chilly in the fridge for a bit before serving. That will help to keep everything in its place.

Then be prepared to hear how wonderful they are when you take them out to serve them. They are sure to pep up any holiday treat tray!

Ingredients 

Coconut Truffles

  • 14 oz. sweetened condensed milk
  • ½ Tablespoon butter
  • 4 Tablespoons finely shredded coconut

Decorations

  • orange sprinkles for the nose
  • White and black chocolate chips for the buttons
  • Sour strips for the scarf
  • Melted dark chocolate for the eyes and mouth

Instructions 

Coconut Truffles

  • Combine the 14 oz. sweetened condensed milk, ½ Tablespoon butter and 4 Tablespoons finely shredded coconut in a saucepan over medium heat.
  • Stir constantly until the mixture starts to bubble. Once it boils, keep stirring for about 5 more minutes until it thickens to a dough-like consistency.
  • Transfer the mixture to a plate and let it cool. Cover with plastic wrap and refrigerate until it’s firm enough to shape, about 30 minutes to an hour.

Make the Snowmen

  • Once the mixture is ready, form small balls of three different sizes for each snowman (small, medium, large).
  • Roll each ball in more shredded coconut to coat.
  • Stack the three balls, starting with the largest at the bottom, securing them with a toothpick.

Decorations

  • Melt white chocolate and use it to glue a sprinkle onto the middle ball as the snowman’s nose and black chocolate chips as buttons.
  • Cut a small piece of sour strip and wrap it around the “neck” of the snowman to form a scarf.
  • For the eyes and mouth, use melted dark chocolate. Dip a toothpick into the chocolate and carefully draw them onto the smallest ball to complete the face.

Chill

  • Refrigerate the snowmen for at least 20 minutes before serving to allow the decorations to set.

Notes

If the mixture is too sticky to handle, add a bit more shredded coconut.
Keep the snowmen chilled until ready to serve to ensure they stay firm.
