These snowman coconut truffles are super cute, but really simple to. The chewy condensed milk and coconut candies are dressed up in their winter finest to look like snowmen. This is going to become your new favorite homemade candy recipe!
Combine the 14 oz. sweetened condensed milk, ½ Tablespoon butter and 4 Tablespoons finely shredded coconut in a saucepan over medium heat.
Stir constantly until the mixture starts to bubble. Once it boils, keep stirring for about 5 more minutes until it thickens to a dough-like consistency.
Transfer the mixture to a plate and let it cool. Cover with plastic wrap and refrigerate until it’s firm enough to shape, about 30 minutes to an hour.
Make the Snowmen
Once the mixture is ready, form small balls of three different sizes for each snowman (small, medium, large).
Roll each ball in more shredded coconut to coat.
Stack the three balls, starting with the largest at the bottom, securing them with a toothpick.
Decorations
Melt white chocolate and use it to glue a sprinkle onto the middle ball as the snowman's nose and black chocolate chips as buttons.
Cut a small piece of sour strip and wrap it around the "neck" of the snowman to form a scarf.
For the eyes and mouth, use melted dark chocolate. Dip a toothpick into the chocolate and carefully draw them onto the smallest ball to complete the face.
Chill
Refrigerate the snowmen for at least 20 minutes before serving to allow the decorations to set.
Notes
If the mixture is too sticky to handle, add a bit more shredded coconut.
Keep the snowmen chilled until ready to serve to ensure they stay firm.
