Peanut butter and jelly is a staple of childhood, but it is usually enjoyed at lunchtime. However, when you turn it into french toast it becomes a wonderful breakfast treat.

Of course you can also make some to take your lunch to the next level. Or enjoy some yummy stuffed french toast any time of day, you know I am not going to judge you!

It is super quick and easy to whip up. This recipe easy easy enough to make on a weekday if you have a couple of minutes, but is yummy enough to become a special weekend breakfast.

This recipe is made from ingredients you are likely to have on hand most of the time anyway. No special planning or trips to the grocery store to make it happen.

Each bite will be filled with childhood nostalgia for adults and children love it too. It is comforting to have what you already love, just better.

It is easy to change up. Everyone can use their favorite flavor of jelly to make it unique.

You can also use crunchy peanut butter if you like a little bit of texture. Or add a few mini chocolate chips to the middle if you want to make it extra decadent.

Tips and Tricks

Though using brioche is recommended for the best flavor and texture, standard white bread can also work well.

Make sure your pan is preheated over medium heat. If the pan is too hot, and the outside will burn before the inside is cooked. If the pan is too cool, the sandwich won’t get crispy.

Storage: This peanut butter jelly French toast is best enjoyed freshly made, but if you do have any leftovers, you can store them in the fridge for up to two days. To reheat, pop them in the air fryer or oven until warmed through and crisped up. 

You can also warm them up in a skillet over low heat until warmed through. You can use a microwave as well, but the texture won’t be quite the same.

Ingredients
 

  • 8 slices brioche bread
  • cup raspberry jam
  • cup creamy peanut butter
  • 3 large eggs
  • ½ cup milk
  • ½ teaspoon vanilla extract
  • 2 Tablespoons butter

Instructions
 

  • Spread one side of four of the brioche slices with the raspberry jam, then spread the remaining slices with the peanut butter.
    8 slices brioche bread, ⅓ cup raspberry jam, ⅓ cup creamy peanut butter
  • Assemble your four peanut butter jelly sandwiches.
  • In a large dish, whisk together the eggs, milk, and vanilla extract.
    3 large eggs, ½ cup milk, ½ teaspoon vanilla extract
  • Heat the butter in a large frying pan on a medium heat.
    2 Tablespoons butter
  • Dip a sandwich into the egg mixture, coating it well on both sides.
  • Once the pan is hot, fry the sandwich until golden on the bottom (about 3 minutes). Then, flip and cook on the other side for another 3 minutes. You should be able to fit two sandwiches in the pan at once.
  • Drain any excess butter from the French toast on some kitchen paper.
  • Slice each French toast sandwich in half.
  • Serve with some chopped peanuts, fresh raspberries, and your favorite syrup if desired.

Notes

You can also switch out the jelly for your favorite variety such as strawberry, cherry, or grape.
