If you are looking for a wonderful but easy brunch treat, this cinnamon roll bake with berries is the perfect recipe. It comes together really quickly but packs a tasty flavor punch.

It would be perfect for a holiday breakfast. You mom would love it for a Mother’s Day brunch or make it for Easter.

You could also make it as a breakfast for dinner along with some scrambled eggs. It is sure to be a hit no matter the occasion.

Why We Love This Cinnamon Roll French Toast Casserole

This yummy cinnamon roll casserole is everything we love about french toast mixed with everything we love about cinnamon rolls. Then there are berries tossed in to make it even better.

Unlike most french toast casseroles, this one does not need to be assembled ahead of time. You can assemble it and then bake it right away.

However, if you want to do the work ahead of time you certainly can. Prep it the night before and refrigerate it until the morning.

All you have to do in the morning is let it sit out while the oven preheats to take the chill off. Then just add a couple of minutes to the bake time.

You can change up the fruit to use your favorites. Chopped strawberries or blackberries work well too.

You can even use frozen berries if you want. You can even leave the fruit off if you want, this recipe is really adaptable.

If you want to go all out, make some maple whipped cream to go on top. It really is the perfect combination!

Can I use almond milk instead of cream?

Yes, you can use half and half or your favorite milk alternative as well. But cream will give you the richest texture.

Cinnamon Roll Casserole With Berries

This cinnamon roll casserole features blueberries, strawberries, and a simple custard. It is the best parts of french toast and cinnamon rolls in one delicious breakfast bake.
Prep: 10 minutes
Cook: 35 minutes
Total: 45 minutes

Ingredients 

  • 2 17.5 oz. tubes refrigerated cinnamon rolls
  • 4 large eggs
  • ½ cup heavy cream
  • ¼ cup light brown sugar packed
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • pinch salt
  • 1 cup blueberries
  • 1 cup raspberries

Instructions 

  • Preheat oven to 350°F and grease a 9×13-inch baking dish.
  • Cut the cinnamon rolls into fourths and put in the prepared baking dish.
    2 17.5 oz. tubes refrigerated cinnamon rolls
  • In a medium bowl, whisk together eggs, cream, brown sugar, cinnamon, salt and vanilla. Pour over cinnamon rolls.
    4 large eggs, ½ cup heavy cream, ¼ cup light brown sugar, 2 teaspoons vanilla extract, 2 teaspoons cinnamon, pinch salt
  • Sprinkle berries over the top of the mixture. This is a great time to add chopped nuts if desired.
    1 cup raspberries, 1 cup blueberries
  • Bake 30-40 minutes or until the tops is golden and the center is set.
  • Top with powdered sugar, maple syrup, or whipped cream if desired.

    1. It adds a little bit of texture if you use chewy bagels! We really like it this way. We certainly agree, anything berries has to be good!

  9. Hi Carlee, well done on the restraint, I don't have much when it comes too sweet stuff, sweet things make me happy! I wonder if I could find a substitute for the bagels as they aren't something I can get here? I have been known to make them, but it's quite time consuming and they wouldn't last long enough to make it into this tempting dish. I'm going to have a think as I would love to give this a go!

    1. You could use stale bread too or french bread or something like that too. I've never made homemade bagels, but that would be a fun project! But you could definitely get close enough with bread instead for this!
