It has an airy base with little chunks of crushed pineapple throughout. It is sweet without being too sweet and creamy without being super rich.

We used a premade graham cracker crust for simplicity. Plus, the plastic insert works great as a lid for transport.

Of course, you can make your own crust with graham cracker crumbs and butter. Crushed vanilla wafers or gingersnaps would be good options as well.

A pecan crust would also be great. The options are almost endless.

The filling is super simple. The lemon juice helps to cut the sweetness and add body to the filling. It reacts with the sweetened condensed milk to make it thick and delicious.

Of course a pineapple pie needs pineapple. A small can of crushed pineapple adds plenty of flavor and bits of fruit throughout.

Adding a tub of whipped topping helps to make the filling airy. It gives it almost a mousse-like texture that is hard to beat.

If you can stir 4 ingredients together and put them in a pie crust, you can make this pie. It really doesn’t get much easier than that!

The only other tip is to give it at least a few hours in the fridge before serving. Like most no-bake pie recipes, a good chill helps to set the filling a little bit more.

If you can’t wait, it is edible right away. The filling will just be a little looser and pieces a bit messier if you don’t chill it.

You could even freeze it and eat it frozen if you want to. It will be extra refreshing that way!

Creamy No Bake Pineapple Pie

This refreshing no bake pie is loaded with creamy pineapple filling. Luckily it is really easy to make. So, you won't mind making it over and over again all summer long.

Total: 2 hours 10 minutes

Ingredients 

  • 1 graham cracker crust 9 inches
  • 1 14 oz can sweetened condensed milk
  • 1 8 oz can crushed pineapple
  • ¼ cup lemon juice
  • 1 8 oz. tub Cool Whip defrosted

Instructions 

  • In a medium bowl, stir together 1 14 oz can sweetened condensed milk, 1 8 oz can crushed pineapple, and ¼ cup lemon juice.
  • Fold in 1 8 oz. tub Cool Whip.
  • Spread the filling in 1 graham cracker crust.
  • Chill at least a couple of hours or overnight before serving.
