Creamy Fiesta Dip
Ingredients
- 32 oz. sour cream
- 2 packages fiesta Ranch dip mix
- 8 oz. shredded Mexican cheese
- 10 oz. can Rotel drained
- 4 oz. can diced green chiles drained
- ¼ cup finely diced red onion
- ½ cup finely diced green pepper
- 1 jalapeno
Instructions
- Finely dice the peppers and onion.¼ cup finely diced red onion, ½ cup finely diced green pepper, 1 jalapeno
- Stir all ingredients together in a large mixing bowl.32 oz. sour cream, 2 packages fiesta Ranch dip mix, 8 oz. shredded Mexican cheese, 10 oz. can Rotel, 4 oz. can diced green chiles
- Cover and refrigerate for at least an hour to let the flavors meld.
- Serve with chips or fresh vegetables.

It is a big batch, but it's so good we always get it eaten up. You can definitely cut it in half. You'll just have a half can of Rotel and green chiles leftover.
