My sister and her coworkers have a mild obsession with this dip, so of course her excitement had me wanting to try some for myself. I am sure glad I did.

Why We Love Cheesy Fiesta Dip

Parties are always made better with tasty snack foods. A flavorful homemade dip can take a party spread from good to great.

This dip is no exception. It would be great to munch on while watching a game, it’s perfectly portable for a tailgate, and it is fun for munching on during a backyard BBQ.

Fiesta ranch dip would even be perfect for a Cinco de Mayo gathering. Homemade chip dips really are always welcome, no matter the occasion.

Sour cream and a couple of packets of Fiesta ranch seasoning get you off to a good start. Honestly, it would probably pass as a tasty dip if you stopped there.

But why stop there when you can make it even better? Add in a can of diced green chiles, and some drained Rotel and this dip is already turning into a party.

Some shredded cheese, red onion and bell pepper add a punch of texture, flavor and freshness. Now stir it all together and let it sit for a bit to let the flavors meld.

What Should You Serve With a Creamy Cold Dip?

Tortilla chips are a great option for this particular dip. Though potato chips would also be good, just be sure to pick a sturdy wavy variety as this dip is loaded with chunks.

You could also use crackers if you prefer. Ritz crackers or even pretzels would be tasty.

Plate with tortilla chips and a pile of fiesta dip topped with shredded cheese and chives.

For a healthier option, it is great on cucumber slices. Celery would also be a nice fresh crunchy dipper.

Can you make this dip in advance?

Yes! It is best if you can make the dip at least an hour in advance to get the flavors a chance to meld. You can make it a day in advance without any issue. Just keep it in an airtight container in the refrigerator.

Can you freeze dip?

Freezing this dip is not recommended. Due to the fresh vegetables and sour cream, the texture would be affected.

Ingredients

  • 32 oz. sour cream
  • 2 packages fiesta Ranch dip mix
  • 8 oz. shredded Mexican cheese
  • 10 oz. can Rotel, drained
  • 4 oz. can diced green chiles, drained
  • 1/4 cup finely diced red onion
  • 1/2 cup finely diced green pepper
  • 1 jalapeno, finely diced

Instructions

  1. Stir all ingredients together in a large mixing bowl.
  2. Cover and refrigerate for at least an hour to let the flavors meld.
  3. Serve with chips or fresh vegetables.
