Sour cream and a couple of packets of Fiesta ranch seasoning get you off to a good start. Honestly, it would probably pass as a tasty dip if you stopped there.

But why stop there when you can make it even better? Add in a can of diced green chiles, and some drained Rotel and this dip is already turning into a party.

Some shredded cheese, red onion and bell pepper add a punch of texture, flavor and freshness. Now stir it all together and let it sit for a bit to let the flavors meld.

That’s it! Now grab your dippers and get to snacking!

What Should You Serve With Fiesta Ranch Dip?

Tortilla chips are a great option for this dips like this that have a little bit of Mexican inspired flare. Though potato chips would also be good, just be sure to pick a sturdy wavy variety as this dip is loaded with chunks.

You could also use crackers if you prefer. Ritz crackers or even pretzels would be tasty.

For a healthier option, it is great on cucumber slices. Celery would also be a nice fresh crunchy dipper.

Make It Ahead Of Time

It is best if you can make the dip at least an hour in advance to get the flavors a chance to meld. You can make it a day in advance without any issue. Just keep it in an airtight container in the refrigerator.

Ingredients 

  • 32 oz. sour cream
  • 2 packages fiesta Ranch dip mix
  • 8 oz. shredded Mexican cheese
  • 1 10 oz. can drained Rotel
  • 1 4 oz. can drained diced green chiles
  • ¼ cup finely diced red onion
  • ½ cup finely diced green pepper
  • 1 jalapeno

Instructions 

  • Finely dice the ¼ cup finely diced red onion, ½ cup finely diced green pepper, and 1 jalapeno.
  • Stir the 32 oz. sour cream, 2 packages fiesta Ranch dip mix, 8 oz. shredded Mexican cheese, 1 10 oz. can drained Rotel, and 1 4 oz. can drained diced green chiles together in a large mixing bowl. Fold in the chopped veggies.
  • Cover and refrigerate for at least an hour to let the flavors meld.
  • Serve with chips or fresh vegetables.

  1. Can this recipe be cut in half. It does sound good.

    1. It is a big batch, but it’s so good we always get it eaten up. You can definitely cut it in half. You’ll just have a half can of Rotel and green chiles leftover.
