Creamy Coconut Candies

These creamy coconut candies have a nice chewy texture and lovely coconut flavor. The best part is that they are super simple to make too. This condensed milk coconut candy recipe is sure to become a favorite when you need a little something to satisfy your sweet tooth.

If you love coconut, this is the candy for you. These creamy little truffles have a flavor reminiscent of coconut cream pie in a nice little bite.

Making the truffles themselves is really simple to do. Just make a thickened condensed milk candy mixture in a very similar way to making the famous Brazilian candy brigadeiro.

Instead of adding cocoa powder like we do in chocolate orange brigadeiro or freeze-dried strawberries like in strawberry brigadeiro, you use shredded coconut instead. The coconut and sweetened condensed milk go so well together.

Look for finely shredded coconut if you can find it. If you can’t try using a food processor or blender to shred the coconut a bit more before you use it.

That will make the mixture easier to work with and give the candies a better texture in the end. You may find finely shredded unsweetened coconut in the health food aisles at the grocery store.

In a pinch, the sweetened shredded coconut from the baking aisle will work. Use whatever you can find.

Other than that, making the candy is pretty straightforward. Just make sure you cook the condensed milk until it is thick enough to leave a trail behind your spoon when you are cooking it.

As long as you cook it properly, when it cools, it will have enough body to hold its shape. Once the mixture is chilled, you can scoop it and roll it into balls.

Roll the balls of chewy goodness in a little bit more coconut to finish them off. You could also roll them in sprinkles, or cocoa powder if you want some variety.

How do I store them?

Store your coconut candies in an airtight container in the fridge for up to 5 days. They are great cold, or let them come to room temperature before enjoying.

 Can I add any flavoring?

Yes! A few drops of vanilla or almond extract would give the truffles a fun twist.

Ingredients 

  • 14 oz. sweetened condensed milk
  • ½ Tablespoon butter
  • 4 Tablespoons finely shredded coconut plus more for coating the candies

Instructions 

  • Combine the sweetened condensed milk, butter, and shredded coconut in a saucepan over medium heat.

  • Stir constantly until the mixture starts to bubble. Once it boils, keep stirring for about 5 more minutes until it thickens to a dough-like consistency.
  • Transfer the mixture to a plate and let it cool. Cover with plastic wrap and refrigerate until it’s firm enough to shape, about 30 minutes to an hour.
  • Once the mixture is ready, form small balls. You can make them any size you would like, but about a Tablespoon each is a good size.
  • Roll each ball in more shredded coconut to coat.
  • Store in the refrigerator and enjoy cold or at room temperature.

Notes

If the mixture is too sticky to handle, add a bit more shredded coconut or chill a bit longer.
