Chicken Salad Wraps

Making your own chicken salad wraps is easy. They are really delicious and are perfect for lunch or a quick dinner. This chicken salad recipe features cranberries and apples for a fabulous mix of flavors and textures.

When the weather is hot, it is nice to have a few fresh and easy meals that you love. These chicken salad wraps should be at the top of your list of recipes that make that list.

The creamy chicken salad features bits of apple for freshness and crunch. There are dried cranberries for a tiny bit of tart and chew.

I like adding slivered almonds for a whole different texture altogether. You could also use chopped walnuts or pecans, or leave the nuts out entirely.

Of course the chicken salad is wonderful as a sandwich. It would also be great served on a bed of lettuce.

I think the most fun way to serve it is as a wrap, though. I like using whole wheat protein tortillas and some fresh lettuce to round it out.

It is a meal that won’t weigh you down. Plus it is so tasty!

Plus I love that you can make the chicken salad in advance. So, it only takes a minute or two to actually assemble the meal.

It is perfect for busy days or when it is so hot that you don’t feel like cooking. Honestly, I would take one of these wraps any time!

Chicken Salad Wraps

Making your own chicken salad wraps is easy. They are really delicious and are perfect for lunch or a quick dinner. This chicken salad recipe features cranberries and apples for a fabulous mix of flavors and textures.

Ingredients 

  • 3 cups cooked chicken diced
  • ¾ cup diced apple
  • ¾ cup dried sweetened cranberries
  • ¾ cup slivered almonds
  • ¾ cup mayonnaise
  • 1 Tablespoon Dijon mustard
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • 6 tortillas
  • 2 cups lettuce

Instructions 

  • In a large bowl, stir together the ¾ cup mayonnaise, 1 Tablespoon Dijon mustard, ¼ teaspoon salt and ½ teaspoon ground black pepper.
  • Add the 3 cups cooked chicken, ¾ cup diced apple, ¾ cup slivered almonds, and ¾ cup dried sweetened cranberries. Stir until everything is combined.
  • Cover and chill if making ahead, or go ahead and assemble the wraps.
  • To make a wrap, fill a tortilla with about ⅓ cup of lettuce (or your desired amount) and about ¾ cup of chicken salad.
  • Roll the tortilla around the filling and enjoy!
