This super creamy brownie batter ice cream recipe is easy to make and tastes amazing. Adding brownie mix to homemade ice cream makes it super chocolaty and oh so good.

Mimi came up with this recipe back in 2015. She was on a roll of making all kinds of ice cream flavors.
This ice cream was made to compliment a banana cake topped with brownie batter frosting. It worked out great because both the frosting and the ice cream use part of a box of brownie mix.
Of course both were delicious. So I decided it was time to remind you how good they are and whipped both up myself.

Why Are There Eggs in Homemade Ice Cream Recipes?
The eggs do a few things to help your final ice cream’s texture. The eggs work as an emulsifier, which helps to keep the mixture homogeneous instead of the cream rising to the top.
Plus the egg yolks help to add a richness to the ice cream. They help to get that extra creamy texture.

We usually use super fresh eggs from my parents’ chickens and we have never had an issue. However using pasteurized eggs is the safest way to include the eggs.


You could leave the eggs out entirely, but it will change the texture of the ice cream. It will still taste amazing, it just won’t have quite the same mouthfeel.
You could also cook your base like a custard and then chill it before you add it to your ice cream maker. Do whatever you are most comfortable with.
How to Heat-Treat Brownie Mix
We have always known there was some risk involved in eating raw cookie dough and cake batter from the raw eggs. But in recent years we have become more aware of the bacteria that can be present in raw flour and cake mixes.
However, you can mitigate that risk by “heat-treating” the mix. Luckily, it’s super simple and takes just a minute or two. Here’s how…
- Dump the mix into a glass microwave safe bowl.
- Microwave on high for about 1 to 1 ½ minutes, stirring every 20 seconds.
- The brownie mix will be warm (160F) and any bacteria that were present will be gone!
- Let the mix cool completely before adding to the recipe.


What can I add to brownie batter ice cream?
This brownie batter ice cream is smooth and creamy on it’s own. But if you want to add more texture, there are plenty of great options.
Wait until the ice cream is most of the way frozen and churned and then add in whatever you would like. Some great options would be chocolate chunks, small frozen bits of baked brownie, chocolate chips, or chopped peanut butter cups.

Brownie Batter Ice Cream
Ingredients
- 2 large pasteurized eggs
- ½ cup granulated sugar
- 1 Tablespoon vanilla extract
- 1½ cups brownie mix
- 2½ cups heavy cream
- 1 cup whole milk
Instructions
- With an immersion blender, beat the eggs until they are light and foamy. This takes about a minute.2 large pasteurized eggs
- Slowly add in the sugar and brownie mix, until well incorporated. (About two minutes)½ cup granulated sugar, 1½ cups brownie mix
- Add vanilla.1 Tablespoon vanilla extract
- In a large measuring bowl, mix together the cream and milk. Gently stir in the egg mixture. (you don’t want to beat it at this point, the air is already added to the eggs)2½ cups heavy cream, 1 cup whole milk
- Pour into your ice cream maker and make according to your maker’s directions.

Is this recipe one that can freeze hard or is it to be eaten soft and right away?
You can eat it right away, but it does freeze hard for scooping as well. We generally freeze for a few hours before eating it.
