Baked oatmeal is one of our ultimate favorite breakfasts. It is so quick to put together and the flavor options are endless.

Once I found a base recipe I loved, I couldn’t stop playing with flavor variations. It’s been a while since I shared a new version with you, so I thought it was time for a new one.
MiMi actually suggested doing a lemon, honey and blueberry oatmeal version some time back. So when I got a pint of blueberries from our CSA, it seemed high time to finally do it.
Of course lemon and honey are such a perfect pairing. Lemon and berries are another natural match.

So it makes perfect sense that this combination was good. Even after all of the baked oatmeal recipes I’ve tried, I think this is a new favorite!
Don’t tell the recipe for brownie baked oatmeal though. I don’t want that one to get jealous!

It’s a one bowl recipe that mixes together in almost no time at all. You can have it in the oven in just a few minutes with very little effort.
This particular recipe makes a nice light and fluffy oatmeal. It is not dense or stodgy.

Baked oats are great served warm or at room temperature. I even enjoy it cold in a pinch.
The leftovers keep well. It will easily last a week in the refrigerator or 3 months in the freezer. Just quickly warm it up in the microwave and you are good to go.

This baked oatmeal is wonderful on its own, in fact that is how I enjoyed it. However there are a lot of fun ways to dress it up.

- Dollop of yogurt
- Dollop of whipped cream
- Additional fresh berries
- Pour over some milk

Lemon Blueberry Baked Oatmeal
Equipment
- 8-Inch Square Glass Baking Dish with Lid
Ingredients
- 2 cups rolled oats
- ¼ cup honey
- 2 Tablespoons lemon juice
- 1 teaspoon baking soda
- 1 pinch salt
- 1 large egg
- ½ cup milk
- 1 cup yogurt plain or vanilla
- 1 teaspoon lemon extract
- 1 pint blueberries
Instructions
- Preheat oven to 350°F and grease an 8×8-inch pan
- In a mixing bowl, combine milk, yogurt, egg, lemon juice, salt, and lemon extract.2 Tablespoons lemon juice, 1 large egg, ½ cup milk, 1 cup yogurt, 1 teaspoon lemon extract, 1 pinch salt
- Stir in oatmeal, honey, and baking soda.2 cups rolled oats, ¼ cup honey, 1 teaspoon baking soda
- Fold in blueberries and pour into greased pan.1 pint blueberries
- Bake for 35 minutes or until just set.
- Serve warm or at room temperature, refrigerate leftovers.

Super easy and delicious! I used oat milk and zested a fresh lemon. I would definitely make this again using a slightly bigger pan, so I can cut it into 9 pieces.

there’s no sugar in the list of ingredients, but it’s in the directions. and do we use baking soda or powder?
The honey is the only sugar. And baking soda works well in this recipe because there are plenty of acidic ingredients.
It says to add flour but I don’t see it in the receipe
I’m sorry about that! I used to add a couple of Tablespoons of flour to my baked oatmeal recipes. I stopped doing that a while back because it’s not necessary. I must have forgotten to update the instructions when I took it out of the recipe. When I remade the oatmeal I didn’t use any and that is what is in these pictures.
You had me at lemon and then blueberry just pushed it over the top. We've been trying to eat more oatmeal and this sounds like a great way to do that.
