Sweet Biscuits for Shortcakes

It is finally that time of year. The weather is warming up and the berries are starting to ripen.

When we have a mess of fresh strawberries, it seems like the right thing to do is to make some shortcakes. Now there are tons of ways to make shortcakes.

We love having berries with vanilla ice cream and angel food cake. The combination is also wonderful with slices of pound cake.

In my family, though, if you say shortcakes that means biscuits. We grew up eating a version made with slightly sweetened bisquick drop biscuits.

Now we love making these tasty sweet biscuits from scratch. They just take a few minutes to put together and they taste delicious.

I like to macerate the strawberries with a couple of Tablespoons of sugar for a bit. Not only does it accentuate the sweetness, but it draws out some of the juice which can then soak into the biscuits.

It is the simplest way to make a really yummy strawberry sauce. Fresh berries are classic, but defrosted frozen also work great.

Of course these biscuits don’t have to be used for shortcakes. They are also good with butter and/or jelly or honey.

Sweet Biscuits for Shortcakes

If you like sweet biscuits for shortcakes, this is the recipe for you. They are buttery, lightly sweet, and delicious. Add fruit and whipped cream or ice cream (or both!) for a super tasty dessert.

Total: 25 minutes

Ingredients 

  • 1 cup milk
  • 2 Tablespoons vinegar
  • cups all-purpose flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 4 Tablespoons granulated sugar
  • ½ cup unsalted butter cold
  • 1 Tablespoon butter melted
  • 1-2 Tablespoons granulated sugar for sprinkling on top

Instructions 

  • Preheat oven to 475℉.
  • Mix together milk and vinegar and chill in the fridge for five minutes.

  • Place dry ingredients in the food processor. Pulse a couple of times to combine.
    2½ cups all-purpose flour, 1 Tablespoon baking powder, 1 teaspoon salt, 4 Tablespoons granulated sugar
  • Add the cold butter. Pulse until mixture becomes coarse crumbs, about 22 pulses

  • Stir in milk and vinegar mixture. Pulse until the dough just comes together

  • Knead the dough 3-4 times on a lightly floured surface. It's ok if it is slightly sticky, but should feel like a nice dough. Add more flour or a splash of milk if needed to get the right consistency.
  • Pat into a 7×10 rectangle. Cut biscuits using a 3 inch cutter and place 2 inches apart on a baking pan.

  • Brush with butter and sprinkle with sugar.  Bake on the top shelf of your oven for 14-17 minutes.

  • Transfer to a wire rack to cool.
