Crockpot Honey Glazed Carrots

If you like carrots, you are going to love this simple recipe. They are cooked in a crock pot making them beyond easy and the sweet glaze is sure to make people want seconds.

Using a slow cooker to make your side dishes is a perfect way to save space on the oven or stove. It also allows you to do all of the prep work ahead of time if you are feedings guests or trying to enjoy a holiday with your family.

It also makes this a great make and take recipe. You can prepare them at home and start to cook them and then finish them off or keep them warm at your destination.

The naturally sweet carrots lend themselves well to a simple glaze. The addition of a bit of butter, honey and cinnamon makes them extra delicious.

The salt helps to balance everything else out. I think you will find it is a great way to make vegetables more palatable to kids and grown ups alike.

We like honey glazed carrots so much, it was time to make a slow cooker version. It makes things take a little longer, but completely hands off.

These carrots are great served alongside a salty entree like ham. So they are a perfect addition to holiday menus like Thanksgiving, Christmas or Easter.

Making the Carrots

Recipes really don’t get much easier than this. Just chuck a bag of baby carrots into a slow cooker.

Then add honey, cinnamon, salt and a bit of butter. If you want to change it up a bit you can easily use maple syrup or brown sugar instead of honey.

You can also add a bit of ground ginger if you like. Ginger and carrots go really well together.

For a thicker glaze, take the lid off of the crockpot at the end and leave the slow cooker on high. That will allow for some of the liquid to evaporate.

To fancy up the presentation a bit, you can sprinkle on some fresh herbs at the end. Chopped parsley is a great option.

For a spicier version, you can try using chili powder instead of cinnamon. Really the options are limitless, let your taste buds be your guide.

Storage

Store leftover carrots in an airtight container in the refrigerator for up to 5 days. They can be reheated on the stove or in the microwave.

Crockpot Honey Glazed Carrots

Slow cooker honey glazed carrots are a perfectly easy side dish. They have a hint of cinnamon and a touch of honey making them extra delicious.

Equipment

Ingredients 

  • 2 lb. baby carrots
  • 2 Tablespoons butter
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • cup honey

Instructions 

  • Spray slow cooker insert.
  • Add 2 lb. baby carrots to slow cooker.
  • Cut 2 Tablespoons butter into small pieces. Distribute the butter over the carrots. Sprinkle with 1 teaspoon ground cinnamon, ¼ teaspoon ground ginger, and ½ teaspoon salt.
  • Drizzle ⅓ cup honey over carrots. Cook on high for 4-5 hours.
  • Stir to coat and serve. If the glaze is too thin, remove the slow cooker lid and cook on high until it thickens a bit.

  1. I’ve made a version of these on the stove and my toddler is obsessed. I was asked to make them for thanksgiving for 30 people! 🫠🫠 how does the honey fare being in the crock pot? I read that honey will burn and become bitter if cooked in crock pot? I’m really hoping this recipe is the answer to my prayers for having to make sooooo many.

    1. I haven’t had the experience of it burning and becoming bitter. The carrots let off some liquid while they cook, so it doesn’t burn to the sides or anything. Maybe try a small batch and see what you think before committing to the whole thing?

    If I cook the carrots on low instead of high how long will it take? I have a split crockpot and I want to do roasted potatoes on one side and carrots on the other. The potatoes call for 4 to 5 hours on low. Any suggestions?
    I’m doing this as a side dish with my corned beef and cabbage for St Patty’s Day. I’ll have my other 6 crockpots going with the corned beef. Wanted to try your carrot recipe instead of cooking them with the corned beef.

    1. It sounds like you are having a feast! I would do the carrots for 7-8 hours on low. They take a bit to get cooked. Or you could do them on high for an hour or two and then drop it to low when you add the potatoes.

  4. I’m looking forward to trying this recipe, although not much of a cook. Lol. Love carrots, ginger and cinnamon. 🙂

    I need to feed 8-10 people. How should this recipe be adjusted? Can I just double everything? And does the cook time change?

    1. It’s going to be great! You can double everything, I would add 30 minutes to an hour to make sure they all get cooked through. Good luck!

      1. If I substitute brown sugar for honey, is it equal amount – 1/3 cup?

      2. I will be traveling 1-1/2 hours to my destination, with eating about 45 mins to 1 hour after. Should I cook completely before leaving, keep them in slow cooker and then set to warm when I arrive?

      1. Happy to help! Honey is a little bit sweeter than brown sugar, so you can bump it up a bit if you want. However, it will still taste great with 1/3 cup. And I would do just that, go ahead and cook them and then let them warm back up when you arrive. I hope you enjoy them!
