I bought a big tub of strawberry milk powder to make some pink hot chocolate. After making a couple of batches, we still had quite a bit of the powder left and we weren’t going through it very fast.

So, I thought it would be fun to make something different with it. Afterall, I am not one to let things just go to waste.

We are big fans of no bake cookies. Peanut butter no bake cookies are always a hit and a we recently had some maple no bake cookies that were also amazing.

I just love the oatmeal texture in the cookies. I also love how easy they are to make.

Luckily, it is pretty easy to just stir some of the strawberry milk powder into the butter, sugar, and milk base. You’ll be scooping up your cookies in no time!

Carlee’s Tips and Tricks

This recipe works with instant oats and old fashioned oats. I generally use old fashioned because that is what I have on hand and I like the chewier texture.

Watch the boiling sugar mixture closely and once it starts boiling, let it boil for exactly two minutes. If you boil it too long, the cookies will be dry and crumbly.

If you don’t boil it long enough, they won’t set all the way. Two minutes

is the perfect amount of time to hold them together but maintain a soft interior.

Temperature rather than time

If you are worried about judging the doneness of the sugar mixture just by a timer, you can use an instant read thermometer to make sure they are done. The boiling sugar mixture should be about 235F.

To keep the mixture from heating up more, it is a good idea to remove the pan from the heat before you stir in the strawberry milk powder and oats.

Scoop the mixture onto a sheet of wax paper or parchment paper and let the cookies set up. To speed up the process, put the trays in the refrigerator.

Feel free to try other flavors of milk if you can find them. Of course, chocolate milk powder would work and banana would be fun too.

Store no bake cookies in an airtight container at room temperature for up to a week. Or freeze the cookies for even longer storage.

What Did We Think?

These cookies were really fun. They had a nice mild fruity strawberry flavor and great chewy oatmeal texture.

They made for a really fun snack that both LD and I like more than we expected. I think you’ll like them too!

Ok, let’s get to cooking. It’s time for a treat!

Signature that says Enjoy! Carlee.

Cook: 10 minutes
Chill Time 30 minutes
Total: 45 minutes

Ingredients

  • 2 cups granulated sugar
  • ½ cup butter
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ¾ cup strawberry milk powder
  • 4 cups old fashioned oats

Instructions

  • Line a cookie sheet or two with wax paper or parchment paper and set aside.
  • Place 2 cups granulated sugar, ½ cup butter, and ½ cup milk in a large saucepan. Heat over medium to medium-high heat stirring frequently.
  • Watch carefully and set a timer for 2 minutes as soon as the mixture starts to boil.
  • After 2 minutes, remove the pan from the heat. Stir in 1 teaspoon vanilla extract and ¾ cup strawberry milk powder.
  • Add 4 cups old fashioned oats and stir until evenly coated.
  • Working quickly, scoop the mixture onto the wax paper lined cookie sheets. I used a medium cookie scoop and got about 36 cookies. You can make them as big or small as you would like.
  • Allow to cool and harden at room temperature or put in the fridge for a bit to help them set faster.
