Then it is studded with bits of monster cookie dough with all of the chocolate and oatmeal goodness you would expect. The combination is fabulous!

Mimi originally shared her monster cookie ice cream with us back in 2016. I recently made some monster cookie dip for a family gathering and my husband and sister-in-law decided that would be good mixed in ice cream.
So it seemed like a perfect time to dust off this recipe and make a batch. Mimi’s original recipe included cooking some oatmeal and using that in the base.
It did add great body and turned out delicious. I wasn’t in the mood for that, however, so I stirred in some peanut butter for body instead.
It was amazing if I do say so myself! (My husband and sister-in-law agreed!)

Favorite ice cream makers
MiMi has a couple kitchenaid ice cream maker attachments for her stand mixer. She loves them and makes all of her ice cream with them.
I got a cuisinart ice cream maker for Christmas. You freeze the bowl ahead of using it much like the kitchenaid attachment.
Both work great and are relatively affordable. You just have to remember to get the bowl in the freezer in plenty of time to get it cold, but that is a whole lot better than making sure you have enough ice and salt on hand!

Monster Cookie Dough Ice Cream

A peanut butter cookie dough ice cream base loaded with bits of frozen monster cookie dough is a match made in heaven. Your taste buds will be screaming for more ice cream!
Ingredients
Cookie Dough Bits
- 1/4 cup butter, softened
- 3/4 cup peanut butter
- 3/4 cup packed brown sugar
- 1 Tablespoon vanilla extract
- 1/4 cup milk
- 1/2 teaspoon salt
- 1 3/4 cups rolled oats
- 1/2 cup mini chocolate chips
- 1/2 cup mini M&Ms
Ice Cream Base
- 2 large eggs
- 3/4 cup light brown sugar
- 3 Tablespoons peanut butter
- 1 Tablespoon vanilla extract
- 3 cups heavy cream
- 1 1/2 cups milk
Instructions
Cookie Dough Bits
- Beat the butter, peanut butter, brown sugar, vanilla and salt until well blended and smooth. Add the rolled oats and beat until well incorporated. Stir in the mini chocolate chips and mini M&M's.
- Spread onto a cookie sheet that has been lined with parchment paper, or put in a freezer bag and press into a flat disk. Freeze until ready to use.
Ice Cream Base
- Beat the eggs until they are light and foamy. (MiMi likes to do this is a large jar with an immersion blender, but in a bowl with a whisk works too)
- Add in the brown sugar and peanut butter, mixing until well incorporated.
- Add vanilla.
- In a large measuring bowl, mix together the cream and milk. Gently stir in the egg mixture. (you don't want to beat it at this point, the air is already added to the eggs)
- Pour into your ice cream maker and make according to your maker's directions.
- Remove cookie dough from freezer and cut or break off bits of cookie dough the size you would like them in your ice cream.
- Stir cookie dough bits into the ice cream as soon as it is done churning.
- Store in the freezer until frozen.

I love the idea of the oatmeal in this! Years ago grape nuts ice-cream used to be a thing, so maybe I'm preprimed to the idea of cereal and ice-cream! This sounds amazing!!

I could actually see grape nut ice cream being pretty decent! I'll bet it holds its texture. How interesting! I really liked the oatmeal in here. MiMi is pretty creative. I wouldn't have thought to cook it first, but it really worked well!
